Fabulous cuisine! Excellent service. Traditional dishes, authentic flavors. A must-try. Highly recommended!

Excellent cuisine! The wait staff is highly trained, attentive, and friendly. The atmosphere is very refined. A superb selection of wines is also available. The menu is rich in traditional delicacies, expertly prepared by Signora Lalla! The first courses are fabulous, and the pasta is strictly homemade. The desserts are incredible; I'm convinced I've tasted the best Millefoglie of my life! Highly recommended.

Had the fried calamari and it was some of the best I've had.

The food is good, especially the mushroom dishes. The service wasn't the best in terms of wait times and manners, but that's understandable given that we went for lunch on a Sunday. What wasn't right, however, was receiving a bill with prices different from those on the paper menu. The customer should be notified if the prices on the paper menu are different from the actual prices.

We liked Il Carolino so much that we went back twice during our stay in Soriano! The restaurant has a wonderful local feel and serves truly authentic Viterbese cuisine. Some of the dishes we enjoyed were the cannelloni with white duck ragu (so good my husband ordered it both times!), the chestnut soup, wild boar stew, and the medallion of Viterbese pork with chestnuts and plums. Everything was delicious, and the warm, friendly atmosphere made the experience even better. Highly recommend this genuine local gem!

QUALITY! I had asked for a porcini mushroom bruschetta but was told they were out of... stuff! because, given the considerable crowds in the restaurant, they were out of stock! RIGHTLY! Instead, they offered me a bread-based dish with tomato sauce, pecorino romano, and provola cheese. Called "pizzaiola" CROSTINO, I FOOLISHLY thought it was bruschetta with cherry tomatoes, but given my IGNORANCE on the subject, I forgot that the products in question were OUT OF SEASON. Highlighting the SERIOUSNESS of this company, I was also disappointed not to be able to taste this dish because, again FOOLISHLY, I failed to inform the wait staff that I was "intolerant" to pecorino cheese. Subsequently, however, almost miraculously, given my "pressed indifference," I did (or rather, warned) him regarding the other "choices" and, indeed, the next one arrived, namely the characteristic local gnocchi topped with a meat ragù AND! PORCINI MUSHROOMS, which I ALWAYS FOOLISHLY surprised were present in that "offering," while in the first one I had been highlighted the absence of said products, NOT CONSIDERING the fact—given MY TOTAL IGNORANCE—that the "first" is a preparation that uses products prepared "on the spot" and which, on busy occasions, are subject to possible sudden exhaustion or FINISHING OUT BEFORE the forecast! RIGHT! I beg your pardon! While the "second" in question was a "PREVENTIVE" preparation (I was told) it is plausible to think that at the time of this operation by the kitchen staff the "infamous" PORCINI MUSHROOMS were present and therefore AVAILABLE! So much so, in fact, that I found them in the EXCELLENT dish offered to me!!! In short, beyond my FOOLISHNESS, in conclusion after the aforementioned experience I can confidently ASSERTED that this is a place of ABSOLUTE QUALITY in terms of FOOD, SERVICE and FRIENDLY WELCOMING! HIGHLY RECOMMENDED!!!!!

We had lunch with friends during the chestnut festival. We were welcomed warmly, as if we were family, and were treated to some amazing dishes. The oven-baked porcini mushrooms with potatoes kicked off our experience, and for those visiting in the coming weeks, I recommend trying them, as well as the slow-cooked pork medallion. But save room for a special dessert: their millefeuille. A truly special thank you to all the restaurant staff for giving us such a fantastic experience.

Excellent food especially the lamb chops as they melt in your mouth. The spaghetti with clams and their house bread is also delicious. Highly recommended.

Il Carolino is located right in the center of Soriano nel Cimino and offers a selection of traditional local dishes. Card payments are accepted, which is convenient. However, the cover charge of €2.50 feels excessive given the service — we were only brought bread, without any olive oil. We tried the pappardelle with porcini mushrooms and the gnocchi with ragù; both were good, but nothing exceptional.
