Hydra - Ristorante Braceria Pizzeria In Salerno

We booked Hydra after seeing it in Michelin Selected list, but the dinner was a disappointing one. The dishes we tried had interesting combinations, but they didn't work out well: - carbonara foam + cocoa - mullet + red fruits - pork + apple - amberjack + some cookie base - risotto + sea weed + bottarga They do look nice and interesting on paper, but when we tasted them they just didn't make sense. The flavours didn't elevate each other. Both pieces of fish (amberjack and mullet), and even the pork had a foul smell as well. They _should_ be fresh, but maybe something is off about the marination / storage / cooking - I can only speculate, but it left us with a sense of discomfort. I had some digestional issues that night but it's hard to be certain that it was linked to this dinner. The textures are rich: cheese in foam, fish + crunchy base etc. Presentation was top notch for every single dish, we were actually most impressed by the bread plate. Risotto was cooked to perfection. We didn't see any faults in the service either, and the atmosphere was good enough. In summary, it seems the chef wanted to came up with interesting flavour combinations, with a rich mixture of textures and amazing presentation. I believe he delivered in all of these, except the most important one: flavour, therefore we didn't leave the restaurant satisfied.

For Valentine's Day dinner we chose this well-reviewed Salerno restaurant. The menu was very intriguing. The amberjack with fennel powder on beetroot was worth the trip. The cellar is very good. Friendly and helpful staff. All gluten free.

Come dire .. un 6. La location molto curata nel suo stile, accogliente e intimo. Cibo abbastanza buono, con impiattamenti curati, giuste anche le porzioni. Menù pesce e carne, cercando di riprendere la tradizione locale. Ampia scelta di vini. Il costo superiore alla media. Il personale disponibile e gentile.

Incroyable! Tout était super. Nous étions un groupe de 5 pour le dîner, nous avons pris différents entrées, plats et desserts et tout était succulent. Le décor est magnifique et la présentation des plats est soignée et singulière. Service attentionné. Mention spéciale pour le choix et les prix très attractifs de la carte des vins. Ce restaurant mériterait une étoile Michelin.

This is one of the best meal we've had, including Naples and Rome's 1 Michelin star restaurants. Some dishes have left us with unforgettable memories such as the guinea fowl, the pumpkin, the orzo's mushrooms, or the octopus. The atmosphere is great as is the service. Everything was tasteful, down to the careful selection of cheeses with subtle differences. One of the top dining experiences in Italy.

Location: locale molto bello e molto accogliente sito nel centro storico di Salerno rende questo ristorante molto affascinante. La mise en place non mi è piaciuta particolarmente però gli arredi interni sono minimal ma adeguati all’idea che ha voluto dare la proprietà. Voto 6 Menù: tutto molto buono e le varie proposte gourmet mi sono piaciute. Buono il pane fatto dallo chef. Buoni gli antipasti. Voto 7 Servizio: un po’ sterile però il personale di sala cordiale e gentili. Voto 6 Conto: buono. Voto 7
