Gino Fabbri - La Caramella In Bologna

English: We stopped by almost by chance at midday, and given the reputation of the pastry chef, we thought: why not have a second breakfast rather than lunch? Even though it is a simple prefabricated building, the interior management is spectacular; a joy for the eyes. For this reason too, expectations were very high, and they were met. The croissant pastry, especially the one with pistachio cream, is among the best I have ever tried; so much so that I would not have minded eating even just an empty croissant, even though I am extremely greedy when it comes to jams. The ricotta and pistachio were also excellent. And the staff proved to be quite attentive. The only big flaw of a place like this is the presence of flies. Lots of flies. From a master pastry chef of Gino Fabbri's reputation and from a chic place like this I would at least expect there to be no insects, at least inside. Seeing 5/6 flies flying incessantly towards the tables, all at the same time, honestly shocked me. I hope it was just a particularly unlucky day, because if this is the norm, I certainly don't want to come back, regardless of how good the croissants are. Another point: the milk was really too little for the type of glass it is served in. The fact that it didn't even reach half made me appreciate it less. I think that a company like this shouldn't have any problems with its quantities of this drink, being a bar-pastry shop. Apart from this, if we pass through Bologna again, we will gladly return to try even just the impeccable-looking pastries we saw on the counter, in the hope of not finding any more hordes of flies inside the place.

Delicious desserts. Filled to perfection and crumbly... at the entrance you want to try everything ❤️ the tables outside are very relaxing, it has a park and a large parking lot around, it is easily reached from the city via a cycle path. Recommended

Pastry of pure excellence. The mignon are not sold by the kilo, but only in packages, where you choose the number of pieces. The cakes and anything on display already have the final price clearly visible and without surprises. Very high quality even for the savoury. Laboratory in view Michelin style. Prices obviously well above average for quality and aesthetics absolutely above average.

Top croissants and pastries! A little expensive though when it comes to the pastries and the bar.

Consistently excellent. The service here is always friendly and welcoming, making you feel like a regular even if it's your first visit. The pastries and sweets are incredibly fresh—flaky, rich, and never overly sweet. The cakes are not just delicious but also beautifully crafted, perfect for special occasions or just because. Their outdoor patio is a gem—shaded, peaceful, and a great spot to unwind with a coffee and something sweet. You can tell this place puts care into everything they do. Definitely a go-to for quality and comfort.

Not a very big place. Few seats inside but many in the veranda area. Sublime pastries, but poor cappuccino: small, half of which was just foam.

Una colazione nella media. Da Gino Fabbri sicuramente aspettavo molto di più. Paste e dolci molto buone ma non eccezionali.Mi aspettavo una vetrina molto più ricca e variata. Gino Fabbri col cappello da pasticcere dietro le vetrine dava sicuramente un tocco coreografico nel locale ma il locale per il resto è abbastanza anonimo. Di sicuro non metto in dubbio la bravura del maestro pasticcere, ma forse andrebbe ancora valorizzato di più. Ci torneremo dì sicuro!
