05/08/2024: Best of the best for the top50, 3* and green * Michelin, Top50 Italy best restaurant. The osteria Francescana is a winner takes all in the word of gastronomy. The expectations are high and for what it concerns me are met. I won’t discuss decore, service and such things.That said, the Osteria has now a changing menu with some staples a la carte. We took the full menu (travel through Italy) and added the 5 forms of parmigiano and oops I dropped the lemon tart, 2 of massimo more iconic plates. More than that would be way too much. We opted for bottles of wine instead of pairing. The pairing offers too many things i didn’t like to have with my meal (beer, liquors, sparkling sweet wine). Our lunch at the Francescana hit all the points. Most courses are brilliant and perfectly executed and plated. There’s playing with food but without exaggeration (what for example you can find more in the Nordic fine dining scene). Not every plate was a hit though, the ditalini didn’t make it for everyone at the table. The Adriatic Sea and the ravioli with rape, bagna cauda and truffle where also below expectations, I feel there was a chance missed there. I know those flavours very good and I think they could have been valorised differently. Of course Italians and people that lived for long in Italy live the experience differently. We’re extremely happy with the choice of adding the staples from the classic Franciscans menu because they are absolutely fantastic and there’s a reason with that menu Bottura conquered so many palates in the world. Little tip: Casa Maria Luigia doesn’t have the official stars and prices but offers the Francescana experience. And with more classic dishes. It’s an informal setting, with everyone seated together and i think right now is even a better experience than the Osteria itself. Another tip is you can order half portions, that’s very useful if you want to try extra flavors without having to eat that much. To wrap it up, is it the best restaurant in Italy? Or in the world? Debatable, so many things like sponsor and advertisement play a role here. But is it worth the hype and would I say is a must if you’re into fine dining? Yes, absolutely yes.
