Forno 🥯 Urbano is a little gem in the heart of Trento. It's not a large location, but it's well-kept and modern, offering seating so you can comfortably enjoy their delicacies. As soon as you walk in, you're intoxicated by the delicious aromas; the bread and pizza 🍕 are on display, a feast for the eyes.
I was delighted to see the large loaves, made with sourdough and made with different types of flour 🌾 (rye, spelt, Senatore Cappelli), certainly refined products that unfortunately I didn't have the chance to try, but they looked "beautiful."
The pan pizza is obviously the star, and here there's a truly wide selection of products on the counter, and they're all super inviting. Crispy yet soft dough on the inside, a sign of long leavening and high hydration, with very elaborate toppings (quoted as "terrible" 😋😅).
I was very surprised to see even unique products that aren't exactly typical of this city, such as the Sfincione Palermitano (in Trento 😱) and chickpea farinata 👍👍.
We chose the Margherita pizza because it's always a must-try. It's delicious, and note the fresh, non-melted fioredilatte on the pizza (a detail for true connoisseurs 😉). Then there's the pumpkin, taleggio, rosemary, and amaretto pizza... delicious 😋, the sweet-savory contrast makes you salivate like crazy 😅😋😋.
Then a gourmet stuffed pizza, very special with prosciutto, arugula, and caramelized dried figs, super crunchy and rich in flavors and contrasts, heavenly 🤯🤩😇👏👏👏.
The guys behind the counter are super fast despite the place being packed with customers, courteous and precise in their service 👌.
What Forno Urbano offers is certainly a Roman-style pan pizza, contemporary, to put it briefly "Bonci-style," so you can admire not only the dough but especially the toppings, some of which are truly elaborate and exclusive.
On a sore point: the prices are a little high, but we know that quality ingredients cost money and deserve to be paid for. The quality is there, and this justifies the medium/high prices.

Pizza by the slice in the city center. Excellent variety of choices for all tastes. Very light, semi-whole wheat dough and quality ingredients. Limited seating inside.

Truly spectacular pizza! 🍕
Super light dough, melt-in-your-mouth and perfectly fragrant: you can taste the high-quality flour used; soft on the inside and slightly crunchy on the outside, perfectly balanced.
The toppings are excellent, all fresh and perfectly paired. Every bite is full of flavor without being heavy.
You can tell they put a lot of care into choosing the ingredients and making the dough.
Highly recommended, I'll definitely be back!

Hands down, the best focaccia in Trento.
Delicious dough, well-leavened. There are many vegan and vegetarian options, all carefully considered, and the ingredients used are truly top-quality.
I highly recommend trying the one with stewed leeks, walnuts, and cheese, but it's certainly not the only one worth trying.
The only suggestion I have is to add a little more tomato to the San Marzano. At least on my slice, I could taste the excellent quality of the tomatoes used, but the small amount didn't allow me to appreciate them as they deserved.
That said, I reiterate that your place was a delightful discovery. I'll definitely be back and try the sweet focaccias 😼🤤

The pizza dough was excellent, light and crispy. Two small suggestions: 1. Add a little toppings/sauce to make the slices taste more like pizza and less like focaccia; 2. In the hallway, dim the lights/make them more yellow, less white, to make the atmosphere more welcoming.

The place is a bit cramped and dark, so you don't expect much. But as soon as you walk in, you're enveloped by the aroma of authentic pizza. The menu is truly extensive, with unique combinations like pumpkin, persimmon, and delicious cheeses. The pizza has a crispy crust. Perfect. The service is excellent.
