Eufrosino, the patron saint of chefs, is the perfect name for this restaurant that celebrates traditional Roman cuisine by offering both classic dishes and interesting reinterpretations. Last night we had dinner at Eufrosino Osteria, choosing the dishes that most intrigued us from the menu.
Our meal began with boiled meatballs in green sauce, a very ancient dish with origins dating back to Persia, where they were called kofta. These meatballs spread throughout the Middle East and later to Europe, adapting to local culinary traditions. The green sauce, made with capers, anchovies and parsley, added a note of freshness to the meatballs.
Among the appetizers we also tried the pandorato with anchovies, a dish that comes from the idea that bread should never be thrown away. The slices of bread filled with cheese and anchovies, are soaked in egg and then fried in boiling oil
A very tasty dish that surprised us was the tordo matto, horse rolls typical of Zagarolo. According to legend, the name "tordo matto" comes from an episode that occurred during the occupation of the lanzichenecchi in 1527 in Zagarolo, when a wounded soldier asked for food from some farmers and, not liking the meal offered, began to shout the word "drossel". The farmers, to resolve the situation, used the meat of the soldier's horse to prepare the rolls, flavored with a little lard, herbs and spices cooked on the grill. The soldier ate the food greedily and drank some wine, got drunk and began to sing "drossel" until he fell asleep satisfied. The next morning, the peasant woman went to check on the health of the soldier and realized with amazement that the "mad" soldier, as everyone now called him, had disappeared. The dish was prepared many times and was well received by all the inhabitants of Zagarolo. Not long after, the farmers discovered that in German "drossel" means "thrush". Therefore, the original recipe took the name of tordo del matto, later simplified to "thrush mad". The version offered by Eufrosino Osteria included a filling of chopped lard, wild herbs and spices, cooked in wine and served with fagioli all'uccelletto.
The seasonal parmigiana prepared with Mantua pumpkin, gorgonzola, fiordilatte, thyme and rosemary proved to be an interesting variation on the classic eggplant parmigiana. A very fragrant dish that won us over for its creaminess and harmony.
The chicken cacciatore and the saltimbocca alla romana were prepared with care and attention, resulting in tasty and delicious dishes.
Coda alla vaccinara, prepared with oxtail, is a symbol of Roman cuisine and is considered the "queen" of the fifth quarter, that is, the parts of the animal left after the prized cuts have been sold. The fifth quarter includes tail, tripe, pajata, heart, spleen and all the offal. It was perhaps the most challenging dish of the evening, but the intense flavor and softness of the meat gave us a truly unique culinary experience.
The baked potatoes, crispy and golden, completed our meal excellently, representing a perfect example of poor cuisine that enhances the basic ingredients.
The welcoming atmosphere and friendly service made the experience even more enjoyable. Eufrosino Osteria is an ideal place for those who want to immerse themselves in Roman culinary tradition and can certainly be a must-see when there are friends and relatives who come from outside Rome.

Typical Roman cuisine, excellent courses. I wasn't very "Roman", since I had the tortellini in broth (I'm crazy about it), but they were still very good.
The portions were not large, but still adequate.
The service was fast, courteous and punctual.
Be careful with parking, it is quite difficult to find, so you need to move in time.

The cuisine and the raw materials are excellent, we had 2 exceptional appetizers (tripe and boiled meatballs) and 2 first courses, carbonara (too much egg and egg pasta not a positive effect) and very good and rich lasagne alla vaccinara. I would recommend more local wines given that the cuisine is Roman (there is no house wine but only a bottle or glass not exactly from a tavern) 2 coffees, total bill 70 euros. Well spaced tables. Recommended

Trattoria semplice, con piatti alcuni piatti decisamente convincenti.
Peccato per l'acustica del posto che rende l'esperienza decisamente poco piacevole: il locale è grande e disadorno. In più il soffitto è molto alto, per cui c'è un notevole riverbero e decisamete poco rilassante l'esperienza.
Basterebbe veramente qualche pannello fonoassorbente!

Nonostante la distanza dq casa, ne è assolutamente valsa la pena. Eufrosino è un ristorante molto “spartano” ma con un’anima ben precisa. Cucina della tradizione con molte rivisitazioni contemporanee e di stagione. Ottimo il pane e i dolci. Bella carta dei vini. Consiglio
