I've been frequenting this place since the previous management, and even today, I've never left dissatisfied.
It's one of the few places where you can find true research and innovation in dough and leavening: pizzas, peels, schiacciate... all with different and interesting textures.
Some combinations work better than others, but the real musts remain the pan pizza, the round pizza, and their tiramisu.
You absolutely must try the Tuscan pan pizza with chicken liver pâté and chocolate: surprising and delicious.
I wasn't so impressed with the pizza escarole with ciauscolo, which was a bit heavy due to the amount of ciauscolo and the lack of a real contrast that cuts through the fat, and the Ligurian Nomaki.
Anyway, it's always a pleasure to return!

I had a whole-wheat pizza with chickpea hummus, tuna in porchetta, and sweet and sour onions. What can I say? Delicious. Reading the menu, I was pleasantly surprised by the focus on "modern" pizza shapes, not only in terms of composition, but also the perfect balance of flavors. I'll be back to try Tuscany. Congratulations, excellent work, truly fair value.

Finally, in Prato, I discovered a proper contemporary pizzeria. It's a quiet, modern atmosphere with a beautiful view of the kitchen, and the staff are friendly, attentive, and knowledgeable.
The nomaki are absolutely amazing, especially the Ligurian one. As for the pizza, the dough is crispy and light, and the ingredients used are top-quality.
I'll definitely be back to try other dishes.

Well, I think there's little to say about Edonè. One word is enough to describe the experience I had there... and that's extraordinary! The location, despite its simplicity, is refined and attentive to the smallest details, a clear reference to the restaurant's core values: quality, passion, and innovation.
These values are clearly reflected in the menu, which stands out for its variety of pizzas and six different doughs. The pizza stands out for its contemporary reinterpretation of tradition, with great attention to the quality of the ingredients, a quality that is also reflected in the drinks and dessert selection.
The service is attentive and meticulous, but the most noticeable aspect is certainly the passion that goes into this project.
Edonè isn't your typical pizzeria, but I personally rank it as one of the best I've ever been to. For all these reasons, I highly recommend everyone try it at least once... and I'm sure it won't be the last!
