On Monday, September 8th, I had lunch at Trattoria Due Cavalli and it was a truly positive experience. Kudos to the chefs: I spotted them on the way out, two young men who truly deserve a round of applause! The agnolotti sauce was fantastic, the creamy filling on the tarts was mouth-watering, and the roast was a real treat. Authentic dishes, well-prepared, and bursting with flavor. Well done, guys, keep it up!

We had dinner, having booked a few hours in advance. The waitress was knowledgeable and made a great impression on us. The service was impeccable (she answered everything we asked, was clear in her explanations, and very polite). The food, including the ingredients, was excellent. The tartare was excellent, with a garlic mousse to accompany it, a must-try. The veal with tuna sauce was tender and creamy. For our first course, we had tajarin with Bra sausage ragù, handmade, a real treat, as were the gnocchi with Bobbio blue cheese... I was absolutely blown away: handmade gnocchi that melted in your mouth! The bunet was also excellent! We'll be back!

Great food, original menu and fantastic snails! Very attentive and friendly service, quiet environment (place with few tables). Definitely recommended if you happen to pass through Saluzzo and want Piedmontese dishes

To talk about Italian culinary culture you absolutely have to stop by places like this. These places, typical taverns/trattorias of provincial towns, are able to maintain tradition, the quality of the raw materials, all always accompanied by the courtesy and smile of the staff. We went to this typical restaurant in Saluzzo for Easter lunch. I won't list all the dishes, it would be excessive. I just want to point out that these places make our country unique in its kind, in its art and in its history. Advised!
