There are many types of cuisine, but Chef Pierluigi's cuisine at Don Evandro is an act of love. Love for the land, love for the raw materials, which are enhanced in every way (we drank a cocktail with onion extract that was a revelation), love for culinary art and technique, and love for his guests. We had the pleasure of tasting so many different dishes, combining tradition and innovation, transforming "a simple onion" into a masterpiece, bringing "chitarra" with crayfish to the table with a sauce that is truly a distillation of flavors, blending earthy roots with freshwater flavors. All this was topped off by Eugenia's kindness and warmth, which made us feel welcomed and at home in a minimalist yet meticulously maintained setting. If cooking is an act of love, you just need to trust and be guided, with an open mind and a palate ready for an experience to remember.

Don Evandro was an excellent fine dining experience. The food was excellent, sourced locally, and cooked/presented in a way that highlighted the ingredients and flavours of the local region. The staff were friendly and despite the formality of the dining experience, I found myself to be quite comfortable.

I absolutely loved the place, the food, and the service. Every dish surprised me, not only with its flavor but also with its meaning. Don Evandro is an intimate and chic atmosphere where you feel right at home. I went with my husband ♿️ and my baby daughter, and the service was excellent. We'll be back, thank you 🙏✨

Pierlugi and Eugenia prove themselves to be wonderful hosts. It's not their first time at Don Evandro, but it's their first with the new menu. A truly brilliant choice, in my opinion, where (like in the inns of old) they cook and serve what the season has to offer: let them create and trust them, they'll surprise you!
