A perfect once in a life experience :) Not only the food, but also very good service, great timing. It's just that the incredibly extensive wine menu needs more support. You need training to choose wine from that menu without assistance. Therefore, the wine menu should come with a consultant.

uno degli stellati "storici" su cui avevo aspettative elevate, date le 3 stelle e una fama di lunga data; location bella e immersa nel verde, molto elegante e ricercata anche negli arredi; servizio da 3 stelle, poco da dire, e ottimi gli abbinamenti dei vini con le portate; per quanto riguarda il menu, sicuramente ricercato su alcuni piatti, mentre su altri meno; in generale mi è piaciuto, sia chiaro, anche se personalmente l'ho trovato qualche gradino sotto altri 3 stelle

Michelin 3 sterren, dat betekent een reis vanuit Nederland plannen om zo'n mooi restaurant te bezoeken(30/6). En plannen is zeker noodzakelijk, want dit restaurant ligt in the middle of nowhere. Kortom, het restaurant stond al een aantal jaren op ons verlanglijstje en het is er nu eindelijk van gekomen. En daar hebben we helemaal geen spijt van gehad. Op een doorgaande landelijk weggetje op het platteland vindt je deze sterrenzaak. Bij binnenkomst wacht je een zeer vriendelijke ontvangst en wordt je hartelijk welkom geheten. We kregen een mooie tafel bij het raam met uitzicht op de tuin en de rest van het restaurant. Schitterende moderne maar toch ook wel klassieke ambiance waar je je snel thuis voelt. Er valt veel te zien, mooie kunst aan de muur. Natuurlijk kiezen we voor het Menu del Pascatore, 290 euro. 10 Gerechtjes. Uiteraard, omdat we met de taxi van ons geweldige B&B 9 Muse bed and breakfast zijn gekomen, kiezen we ook voor het bijpassende wijnarrangement. De smaakpapillen worden fantastisch gestreeld, zeker met de bijpassende wijnen. Heerlijke amuses om mee te beginnen. Begeleid door Pierre Péters Champagne à le mesnil-sur-oger L'Esprit de 2018, grand cru. Er wordt zeker in de 1e 3 gerechten getoverd met groentes. De foie gras is perfect. En de rest van de gerechten overheerlijk. Kortom, je moet een keer dit restaurant bezocht hebben. Puur genieten. Puur natuur! De bediening is zeer professioneel en uiterst vriendelijk. Zo ook de eigenaren waarbij de vader Antonio Santini ook vice president is van de gerenommeerde groep van restaurateurs van de Les Grandes Tables du Monde. In Nederland zijn daarbij aangesloten de restaurants De Librije, Inter Scaldes en De Groene Lantaarn. Dank ook aan Alberto Santini voor de leuke gesprekken. Het kookboek is prachtig. Het restaurant heeft sinds 1996 - 3 Michelin sterren. Dit is een Italiaans record! Bekroond overigens ook met 1 groene Michelin ster.
