I have been to this wonderful restaurant with my family. As fans of starred cuisine we were really curious to live a unique and unrepeatable experience and so it was, our expectations were not disappointed. From the beautiful location immersed in nature to the excellent quality of the dishes offered and the impeccable service everything was to our liking. A particular appreciation for the saddle of roe deer.

Dal Pescatore is as authentic Italian fine dining as it can be with each ingredient used in preparing dishes is grown in their farm or surrounding region; every guest is treated with special care with 2 set menus or ala carte to choose fromb with amazing wine selection. They made it very special dining experience for us.

I thought a lot about whether to write a review of my experience at the Dal Pescatore restaurant, because I usually avoid writing reviews of places that have disappointed me, preferring instead to reward only those where I was better. However, this is a special case because I think it is worth sharing with other food enthusiasts what to expect from a 3-star hotel that I would define as "anomalous". Let's start with the excellence: the service is of the highest level. That right balance between formality and hospitality. The father and son owners spent time with us telling us anecdotes about colleagues, cellars, the history of the restaurant... Extremely prepared but never intrusive. And around them many excellent waiters managed dinner and after dinner impeccably. Well done and for this reason it is sad to have to penalize other aspects. Why then 4 stars and not 5? 2 things: the first, a minor note, I found the mise en place not very refined... Quite banal porcelain without particular shapes or materials that I would have expected from a 3 star hotel and which I found more sophisticated even on some 2 or 1 star hotels. The second which I find very negative and which also impacts my opinion of the otherwise excellent environment is that in the bathroom you dry your hands with the Dyson service-restaurant style tap... Honestly very disappointing.. However, let's now move on to what prompted me to write the review and which I penalized the most in my opinion: the menu. We chose the longest route to have the most complete experience. I'm probably not the right target for this route which I believe is more suitable for those who appreciate excellent raw materials without overly elaborate preparations, perhaps foreigners who want to get an idea of ​​excellent Italian products. Unfortunately, I found it totally forgettable. Not a dish that amazed me or deserves a second visit. Some high points (the lobster terrine) and some dishes that I read as real wasted opportunities... Artichoke and mixed salad, agnolotti in broth, pumpkin tortelli... good but... Maybe it's because when I choose starred paths I'm fascinated by the complexity of certain executions and the clashes of flavours, but also consistencies, temperatures... I didn't find any of this here... I have indelible memories on my palate of dishes from other starred colleagues in which even in simple salads contrasts of cold sorbets and hot components stand out, crunchy grains and soft creams. Here the raw materials are undoubtedly excellent but served without push. I ate well but I didn't have the dining experience I expected from a 3 star. I was probably wrong to expect from a restaurant that has boasted 3 stars for so long the same level of research and development as more recently trained chefs who probably focus more than Santini on surprising the diner. Finally, nothing to say about the wine list which, although not very extensive, is adequate in terms of the level of bottles and I also appreciated the not excessive mark-up.

From the tasting menu we took, in addition to the classic Mantuan pumpkin tortelli, the lobster terrine with caviar, the Agnoli in chicken broth and the Petit Gris snails deserve a mention.

Poco da aggiungere ad un tre stelle Michelin se non tutto splendido con un personale davvero estremamente preparato e cordiale ed una cantina davvero all’altezza della situazione. Serata assolutamente splendida

Sono stato a cena sabato 14 dicembre con mia moglie..locale molto bello..un accoglienza fantastica compresa quella del proprietario..abbiamo scelto il menù degustazione...i piatti rivisitati ma si sentono i sapori di una volta...a differenza con altri stellati ho visto meno tecnica ma più una cucina che si avvicina ai sapori veri senza stravolgerli...i ragazzi molto disponibile e gentili ma ti lasciano molta libertà...il menù è anche accettabile come prezzo...il sommelier molto grazioso ci ha aiutato nella scelta del vino...abbiamo preso un bianco Gaja...e alla fine abbiamo anche scoperto che c'è un cameriere di Amelia..paese in provincia di Terni..città dove noi viviamo...che dire siamo stati accolti bene e abbiamo mangiato benissimo..auguri di Buon Natale
