Extraordinary! Last night we had the pleasure of dining at this restaurant. Every course, starting with the selection of olive oils, was presented with meticulous attention to detail and passion, personally by the owner, Mr. Carlo, who left us speechless. The chefs are absolutely top-notch. This is one of those rare occasions, unfortunately in Florence, where dining is an opportunity to appreciate culinary art and professionalism with a capital P. 5 stars are truly too few!!! Congratulations.

Fantastic Florentine dining, delicious local menu from start to finish. Great recommendations from Carlo who was a most gracious host. Highly recommended. We visited on a quiet Tuesday evening and had the place to ourselves. With a restaurant this good it should be packed out every day - a real hidden gem. Many thanks for a great dinner.

A place where the welcome and atmosphere are the first thing you fall in love with. Then read the menu and discover a carefully selected selection of traditional and innovative dishes, with high-quality ingredients and carefully crafted preparation methods for every type of meat or fish. Save room for the desserts, because they are exceptional. Many compliments to the chef, the entire staff, and the owner. I can't wait to return! Highly recommended!

A total immersion, which took me away from everything and completely into the Tuscan flavor, tied to tradition but with a constant search for beauty and goodness, for balanced flavors. From the correct use of oil in the ragùs, to the never-ending quest to enjoy what's on the table first... grateful to Paolo the owner, to Carlo, a timeless restaurant manager with a twinkle in his eye for the dishes on the menu, to Cristoforo and the very young staff for the excellent, friendly, and never-invasive service... highly recommended.

When professionalism, quality, and a genuine love and passion for the work come together, a place like Olio is born. It's clear from the moment you step inside that it's a unique establishment, escorted by Carlo, who eloquently introduces you to his world of flavors and exquisite details. The warm welcome at the entrance is complemented by the view of the main dining room, which greets you with artwork from various museums, each piece contributing a classic atmosphere that will delight your eyes. The table service, provided by a charming young man named Andrea, was an experience in itself, thanks to his absolute professionalism, courtesy, and impeccable use of formal language. The olive oil tasting, explained by Carlo with admiration for Tuscan culinary tradition, opens the feast of flavors that Olio has to offer. From the tuna, sea bream, tender meat, and pasta with white truffle, to the various signature desserts, and the excellent Antinori wine, the dining experience was more like a dance of textures, colors, subtle nuances, and surprises. A synchronized dance between host, staff, and ingredients, all blending in perfect harmony to deliver the finest service. Olio offers a feast not only for the palate, but also for the eyes and the soul. My congratulations on creating such a small masterpiece.

A couple of weeks ago my husband and I were in Florence, we tried to find places that offered authentic Italian food, with products from the region and typical dishes of the place, the last night we arrived at this place where we were told that it was authentic Italian food and with products from the Tuscany region (I don't know if that's entirely true since we are not experts in Italian food), the thing is that my husband and I liked the food although it was the most expensive meal we ate in Florence it was also the one we liked the most, the treatment and attention were good and we had a nice evening.

We went to this restaurant at the recommendation of our hotel. It was a very positive experience: excellent food, excellent wine, and above all, excellent service, thanks to the younger waiter with the goatee (sorry, we didn't even ask your name), who contributed a good 50% to the evening's success. The dessert tasting is highly recommended.
