10/05/2026: This place has some genuine high points, if you come here for the pizza, which is exemplary of the Roman style — thin, hot and crackling. I like the atmosphere too, cave-like and local. But the pasta is problematic. A good carbonara is basically the best meal on earth, with crispy guanciale and a silky sauce. But here, the guanciale is flaccid, barely looks like it was touched by heat, and the egg in the sauce arrived scrambled. It takes a lot for me to push away a plate of pasta — in fact, in eight years of living in Rome, I’d never done it before — but when I pointed out the problems to the manager, he didn’t seem to care. So I’m writing this review in the hopes that this restaurant can take elevate its carbonara to the same level as the pizza.
