It's rare to find such an ability to read a guest's desires and guide them with such gentle and expert authority. The cuisine is a hymn to the sea: The raw seafood is touchingly fresh: red prawns and sweet scampi served on ice, followed by a tartare and a carpaccio that are small masterpieces of balance. The risotto is executed with meticulous technique, creamy and savory, enriched with raw shellfish that enhance its texture.
