The restaurant, the service, and the food: wow! An incredibly magical place.
The service is punctual, they pay very close attention to you, and it is executed wonderfully.
They are listed in the Michelin Guide, and that is certainly well deserved; a superb wine list with a sommelier who knows his stuff.
A beautiful story of two brothers who came here from a pizza place. The staff is friendly and affable.
The food is what you expect from Sicily: classic flavors with a modern twist.
The food itself is good but not exceptional; yes, you get many amuse-bouches and bread preparations, etc.
But as a tip, I must mention that it is very salty and there are no huge flavor explosions. It is beautifully presented, and the service and everything surrounding it is top-notch.
But if you want to head towards that star, which I see happening, you need to bring more excitement and sensation into the dishes. For example:
With the amuse-bouches, everything was beautifully presented; the flavors of the chickpea, lemon, olive, and cherry chocolate chicken preparations were really tasty and fine, but the 2 amuse-bouches of tuna with crispy onion and the anchovy slider were not quite perfect. The tuna dish with onion was standard, and the slider was too large, too filling, and lacked flavor.
Next, we were served bread courses, about which opinions at the table were divided; the croissant and the crispy bread with olive were well-received. The grain crisps were very hard, and the bread was simple. That is not a problem, but unfortunately, the olive oil was not of high quality; the bottle was nice, but the flavor lacked depth. The pizza was also flavorful, but the dough was greasy. So much bread is unnecessary in my opinion. The first shrimp course was tasty: good red shrimp with a beautiful chickpea cream; admittedly, the same product was served in quick succession, but the dish worked and was very delicious. The sauce, on the other hand, was superfluous and smelled and tasted a bit too fishy, not in the best way; otherwise, it was a beautiful dish.
Next, a potato dish, of which the main component was very good, but the surrounding garnishes were inconsistent. The aioli was lovely and full of flavor. That was in comparison to the yogurt sauce.
Then a piece of duck; the duck was fine but had a tough piece of fat. The garnishes were tasty with the asparagus and very pleasant. However, a bit too much pepper was used; the freshness of the cucumber kept it well balanced.
A stuffed pasta dish with rabbit; the sauce was very tasty but too salty. The pasta was fine and the flavors were good. The rabbit stuffing was too dry and contained a bone here and there. Salad pea cress was also present. I would say leave it out, especially if the cress is already present in multiple dishes.
After that, more pasta; this was well-seasoned with acidity and a nice sauce. It was slightly on the sweet side, but otherwise, the flavors were very good. Then the main course, and this was less impressive; the spinach sauce was overpowering and the fresh catch was dry. The granitas were also disappointing this time, and once again, the same cresses were used.
Then a surprising pre-dessert: sabayon ice cream with Marsala wine and fig. This was really delicious; the salt flakes brought everything into balance. Nicely sweet, salty, sour, and refined.
The dessert was tasty but on the salty side due to the crumble, yes! Salt is necessary in desserts, but too much is overpowering. The ice cream was fresh and the honey came through beautifully. Good textures, and a palate cleanser at the end worked nicely.
There were no friandises, which I could have recommended (and omitting an amuse-bouche or bread course).
We drank an Etna gin tonic and a rosé champagne beforehand. Also a bottle of Chardonnay from Agrigento and a Barolo Masconi. Very good wines! Also a Marsala dessert wine and an extra champagne. This was really well received.
A truly fun and good experience. I would definitely come back despite some criticism.
A pleasant session in a beautiful establishment with good drinks and service. Friendly staff and a top-notch evening. Highly recommended, you have to try it!

Carusu was our best dining experience in Agrigento. We had the tasting menu and the food was perfect, as was the wine suggested by the sommelier. The ambiance was quiet with good music, and the service was very kind and attentive. Each course was patiently explained. They even provided a cake for my wife’s birthday, which was assembled right at our table. We had a minor issue with the bill, but it was properly resolved by their team a few days later. We highly recommend it and will surely be back when we return to the city.

The experience at this restaurant was truly exciting. They delighted us with high-quality dishes and stunning decor. Humble and well-prepared. They certainly have a great future as chef Allen and his brother Dominique, a talented and knowledgeable owner. All the staff were truly kind. We will definitely be back. Enjoy your trip!

An elegant and welcoming restaurant. Dominique, one of the owner brothers, delighted us with his kindness and expertise. We chose the tasting menu, which was delicious from start to finish. This restaurant deserves a Michelin star. After dinner, we had the pleasure of meeting Chef Allen, a delightful and humble man. Highly recommended, we will definitely be back.
