My visit to Bacio di Latte was a journey of highs and lows, where memorable peaks of flavor collided with a lack of attention to execution that was hard for a discerning palate to ignore. The start was dazzling. The mixed platter undoubtedly deserves the title of "fairytale": a selection of cured meats and cheeses that demonstrates a search for rare and precious raw materials, presented with generosity and intelligence. A celebration of conviviality that alone would be worth the visit. Likewise, the overall selection of sandwiches is visually stunning. The bread is fragrant, the combinations are thoughtful, and the aesthetic impact is remarkable. You can sense the desire to elevate the concept of the sandwich to a gourmet dish. However, the verdict cannot be full due to the slip-up on the Panino Norvegia. While the freshness of the ingredients is unquestionable, the technical execution left much to be desired. The salmon inside clearly came from the tail end of the fillet, a more sinewy and less valuable section, but the most serious flaw was the thickness of the cut. Slices that were too thick made chewing difficult and covered the other aromatic notes of the sandwich, disrupting the delicate balance that salmon requires. A real shame, because the potential for full marks was there. Bacio di Latte is a highly esteemed restaurant, but achieving a full 5 requires greater rigor in the handling of the most delicate raw materials. The best: The Mixed Platter (essential).
