Burro Salato is an elegant restaurant, in the most 'correct' sense of the adjective: the menu items are gourmet but are not an exercise in style as an end in itself. The territory and tradition are present in the dishes, as is right in a very ancient city like Matera, but interpreted in a modern way. The proportions are not restaurant-like, but not molecular either. The hostess pampers you without being cloying. The environment is refined and welcoming. The wine list is extensive, the liqueurs and spirits are exceptional, the service is impeccable. An experience certainly worth repeating!

Extremely welcoming, kind, patient, warm, and helpful staff. Their response via messages regarding the reservation is super quick and nice. The food, service, atmosphere, wine,...it were absolutely amazing from the start to the end, and I would definitely recommend it. We were 2 people ordering 1 appetizer, 2 main dishes, 2 desserts, 2 glasses of local wine, and a bottle of sparkling water for 87€. It's absolutely worth it!

Can a combination of French and Italian cuisine be successful? Definitely yes and Burro Salato proves it. Amazing fondant and unique pancake compositions make you want to come back here. A non-obvious place with non-obvious taste, worth discovering.

Isabella is the most wonderful restaurant hostess we have met! She is the chef’s wife and is out front greeting all the guests warmly and is so patient and kind and enthusiastic to explain any and all of the dishes on the menu. We were 1 vegan, 1 vegetarian and 2 that eat everything and we all enjoyed our meals there ( lunch the first day and dinner the second day) tremendously. Their taralli is the best! For vegans, they have a special separate menu with several choices. I can highly recommend the buckwheat galette ( pancake) with a lovely creamy onion sauce, mushroom and broccoli as well as the grilled Celeriac, which was amazing!

We ate both lunch and dinner at Buro Salato. Both times the food was delicious, and beautifully presented. The owner and hostess, Isabella, was very welcoming, patient and happy to give detailed explanations about the different dishes. We had a great experience for lunch which is the reason we came back the next day for dinner. Absolutely recommend. Not to miss.

Very nice location, small, welcoming.. ideal for a romantic dinner.. impeccable service and tasty food. I recommend the crepes.. Fairly assorted menu although as second courses I would expand the options..

Il Bistrot Ristorante BURRO SALATO in Via Rocco Scotellaro 7 a Matera, un'OTTIMA scelta, condivisa da altri amici per precedente loro esperienza, ne evidenzio subito il clima accogliente del locale grazie alla presenza nella reception di Giuseppe e sua moglie e poi di Isabella che da un ulteriore aspetto di cortesia ed eleganza al Bistrot e validamente anche per la sua esperienza nel mondo dei Vini come molto esperta Sommelier Il Locale è senz'altro un posto in cui andarci per aggiungere un'altra bella esperienza a quelle che si provano visitando la città dei Sassi per sorprendersi e quasi guadagnarsi piccoli piaceri del palato e una pausa di sobrio relax rispettivamente per un menù ricco di interessanti proposte sia di primi che di secondi piatti rivisitati dallo Chef e titolare Agostino, che quasi sembra proporli come se li avesse elaborati da una vita intuendone la sua passione e la sua esperienza calati dentro gli stessi. Infatti la sua esperienza all'estero in particolare in Francia gli ha permesso di elaborare dei piatti fusion che riprendono la tradizione di ricette e materie prime materane lucane che si sposano a meraviglia con le salse e odori che si allacciano alla tradizione d oltralpe, studiate utilizzando elementi e spezie che sposandosi non complicano la tradizione gastronomica del posto ma la esaltano elevandola da cucina povera a cucina per palati esigenti. Si parte da antipastini innovativi con farciture ricercate che spingono con facili suggestioni e con curiosità nel proseguire con altri piatti. Io e mia moglie abbiamo assaporato alici cantabriche con burro salato e cipolla caramellata straordinariamente preparata e poi del baccala mantecato mai assaporato prima, poi siamo passati ai primi con lasagnette con pezzente lucana e fusilloni alla corbonara di mare in cui davvero lo stile fusion segna diversi punti a favore di questo locale che si è poi amplificato con scelta dei secondi con coscia d anatra confit con crema di fagioli lucani IGP di Sarconi e carrè d agnello lucano cotto alla perfezione e dulcis in fundo in coppia io e mia moglie abbiano completato la gustosa parentesi con delle Crepes farcite con confetture di agrumi e altro e di cui quella gustata da mia moglie al caramello e burro salato ha rappresentato la chicca finale della cena. Insomma, consiglio vivamente di fare una capatina in questo locale che propone una ristorazione medio alta di qualità e innovativa e che per qualità prezzo penso che ne valga davvero la pena per essere un riferimento tra i più interessanti nel suo settore a Matera Mimmo e Anna
