I didn't know coffee could be this good. By far the best espresso I have ever had. John cares a lot about his craft, and has a lot of knowledge and passion to share. It is amazing that such a place exists right in SLC. Note that it is expensive, and it is not a "meeting space" kind of coffee shop. The space is oriented to be focused on the coffee, the preparation, and the barista. Go in with an open mind and a willingness to be told the other coffee you've had isn't good, and enjoy a very unique and excellent coffee experience.

My partner and I visited Caffè d'bolla for the Siphon coffee experience to celebrate our anniversary. It was so worth it. After reading some of the reviews online, I was a little worried about what the experience would be like, but it was enjoyable. The owner took the time to talk through the process and explained how and why it all works. We had lots of questions and he was more than happy to answer them. The coffee was amazing. He explained how to drink it to take advantage of all the flavor notes. We ordered a cortado also, which was so good! If you are a coffee lover and want to experience some great coffee, you've got to check this place out. The siphon coffee experience seems expensive but I feel it was worth the price. If you go, make sure to give yourself enough time to sit and really enjoy the experience and be open to follow his guidance on how to drink it to get the most out of all the flavors.

Amazing place, it’s almost like a chef sushi bar for coffee. I bookmarked this place over a year ago after being told about it and finally had the time to stop by SLC to give it a try, great experience. This is not a typical “coffee shop”, he will not make you an iced caramel macchiato to go. He will serve you coffee the way it’s supposed to be served and I really respect that. Take your time, sit down and enjoy a few drinks.

This place is an experience! The coffee is on the spendy side and for people who enjoy coffee; it’s not sweet, his coffee is all about flavor notes and complexity. It’s a lot better than what you would get at almost any other coffee shop. I opted for the 11$ espresso and when I took my first sip of the espresso I was floored at the complexity of the flavor and the quality of the coffee. He makes it all in front of you explains his steps and best of all this place is a one man operation. Just be sure to go in with an open mind because his coffee is art and understandably there is a certain way to experience it truly enjoy his coffee; just take his advice and you won't be disappointed.
