Listening to Fulvio Bressan talk about his wines, how they should be, how he wanted them, how you should approach his world and beyond, means putting your beliefs to the test, what others have told you, what you thought you knew. having understood... then you taste them, and you realize that you are certainly right.
I met him again in a real wine place, Aromatico Cantina e Dispensa in Modena, where his gaze was lost on walls designed with labels of a thousand colours, shelves with many small gastronomic gems as well as, given the period, packages of pandori and carefully selected panettone. An evening with the producer between stories, chats and tastings, accompanied by the meticulous cuisine of Alessia Morabito to create a synergy of aromas and flavours.
To finish, with Giamberlano's panettone, the velvety persuasiveness of pure pedro ximΓ©nez from the Bodegas XΓmenez-SpΓnola, grapes dried in the sun for 21 days, without fortification to preserve freshness and fully enjoy the childish pleasure of its sweet flow along the palate.
In reverse order the extraordinary Pignol 2004, from 19 years of barrels, Pignol 2010, from 13 years of barrels, the muscular Schioppettino 2018, the Burgundy echoes of the Pinot Noir 2018, the very particular charm of the Rosantico 2016. Since I tasted it for the first time, guiltily not even in a long time, on every new occasion I continue to find a unique glass, to which no other wine in the world comes even remotely close, and I have also drunk something in my life.

Non potendo dare 4.5 mi gioco un 5 stelle. Non sono un esperto di vini e quindi , quando ne ho bisogno, mi affido all'esperienza di Eugenio, il titolare.
Il locale prevede diverse tipologie di degustazione. La location Γ¨ bella ma inserita in un contesto residenziale un po' anonimo.
