The journey began with a carpaccio embellished with white truffle and raw porcini mushrooms accompanied by a single-variety Raggiola: a start worth the trip alone. The famous crostuovo with white truffle proved to be an absolute masterpiece, a dish everyone should try at least once in their lifetime. The cappelletti, hand-sealed with the little finger, atop a velvety fondue and scented with prized white truffle, were so perfect that I wish I could wake up every morning and find them on my bedside table. The rabbit alla cartocetana confirmed the excellence of a cuisine that is simultaneously traditional, authentic, and surprising. Virginio and Catia, with passion and dedication, have created a truly special place over the years, where every detail speaks of a love for cooking and hospitality. Last night's dinner was impeccable in every way. An unforgettable experience. Bravo, truly.
