From the first moment you can feel the attention to detail, that rare care that is found both in the dishes and in the atmosphere. The chopped red prawns was simply unforgettable: very fresh, balanced, with that delicacy that only the expert hand of someone who really knows the raw material can enhance. Each bite was a small masterpiece of flavor, a hymn to the most authentic sea. The fish, in general, is surprisingly fresh, which is clearly evident in every course, from raw fish to first courses. You immediately sense that behind every choice there is a rigorous selection of the product and great sensitivity in the processing. Nothing is left to chance. The service also deserves special praise: attentive, thoughtful, always present but never intrusive. The staff is welcoming, kind and makes the experience relaxed and very pleasant. Finally, a detail that makes the difference and that elsewhere is increasingly rare: silence. The atmosphere is intimate and quiet, perfect for a peaceful conversation, without having to raise your voice, without being disturbed by intrusive noises. And to conclude, almost like an elegant signature on an already perfect canvas, the frozen lemon slices served at the end: very fresh, fragrant, refined in their simplicity, capable of cleansing the palate and leaving a last, delicious memory. Pirò is one of those places where you gladly return, because it makes you feel at home with elegance and taste. A true Roman jewel.
