I'm a restaurant professional, and I pay particular attention to certain details that, in my opinion, truly make the difference.
I'll start with the positives: the meat was excellent quality, well-cooked, and perfectly presented. The location is very pleasant and well-maintained, and I particularly appreciated the change of cutlery after each course and the cloth napkins, details that demonstrate customer care. The wait staff was welcoming, friendly, and professional, contributing to an overall pleasant experience.
Regarding the dishes, the only one that didn't fully convince me was the killer "Cortina": it lacked crunchiness, and despite being declared spicy on the menu, it didn't taste that way. A slight imbalance between expectations and the final result.
The meat nigiri also deserve consideration: I would suggest paying particular attention to the preparation of the rice, which is the key element of the dish. In this case, I found it rather bland and slightly stringy, an aspect that inevitably affects the overall harmony.
Finally, there's one aspect that unfortunately left me perplexed. With an open kitchen, the chef's behavior becomes an integral part of the customer experience. During service, seeing the chef vaping and smoking in front of the customers, as well as eating with his hands in full view, was unpleasant. I understand that there are moments of pause or tasting in the kitchen, but when choosing an open kitchen, it's crucial to maintain an impeccable image in every respect.
With a little more attention to these details, the restaurant's quality could rise even further.

A very small but wonderful restaurant. The meat sushi is truly excellent, as are the entrees. The kitchen is open to the public, and it's wonderful to watch them work. Reservations are recommended due to limited seating. I have to say, it's a shame we didn't go there sooner. We'll definitely be back.

An intimate restaurant in the heart of Corato. Open kitchen, attentive service, and quality ingredients are the key features that make us always happy to return. Today we tried a gem on the menu: spaghetti all'assassina di rape with black olive cream and canestrato cheese. It was delicious!

The temple of food: a blend of hospitality, friendly, polite, helpful, and highly trained service staff (explaining the ingredients of the dish served and recommending wines), and the kitchen, the stage where the kitchen team and their chef create culinary magic with unique dishes using typical Apulian ingredients.

What I ate wasn't bad, the quality was there... but it wasn't anything exceptional. What we tried was somewhat flat and bland... the flavors didn't pair well, in my opinion, enough to make your taste buds explode.
Even the fillet... we weren't thrilled.
And then the other flaw is the place, tiny... not even the waiter could get through, we felt short of breath.
Tables stuck to the preparation counter, at risk of having some piece of cured meat thrown in our faces by the slicer.
And then the 50cl water costs €2.50, not even in Milan.
Mmm, I wasn't impressed!

A real gem. They're great at respecting tradition with a touch of innovation, and without fuss or fake gourmet dishes. The service is as excellent as the quality of the ingredients! Excellent value for money! Well done, very good!
