Best piazzas and the salads. The veggies were fresh and the condiments were all excellent. Good quality balsamic and olive oil. Be sure to ask for hot oil if you like your pizza spicy.

We had it filled to the right level (otherwise what's the point of taking 1 liter, to save money, if it arrives not full?) Although I am not celiac, I have a slight intolerance to gluten and refined flours, and I am used to alternative doughs that often turn out dry, crumbly or too compact. Here, however, I found what I can define without hesitation as the best gluten-free pizza I have ever eaten. The dough is surprisingly soft, well leavened and with a pleasantly elastic consistency, which holds the toppings perfectly without "going mushy". The cooking is impeccable, with the right balance between crunchiness and softness. The choice of ingredients is also of the highest quality, from tomatoes to mozzarella, through cold cuts and very fresh vegetables. Another very appreciable aspect is the wide selection of gluten-free beers, which is far from obvious, alongside non-alcoholic beers and the classic traditional options. An attention that demonstrates a concrete sensitivity towards those with particular dietary needs, without making them feel "different". The place is well-kept, welcoming and the service is attentive, courteous and well-informed about gluten-free options, an element that always makes the difference when dealing with food intolerances or sensitivities. I highly recommend I Dissonanti not only to those who follow a gluten-free diet, but also to those who are simply curious to discover an alternative dough made with skill and passion. A virtuous example of how inclusive cuisine can also be extremely tasty.
