A Neapolitan pizza in Salento? A' Verace in Tricase (LE) is definitely an excellent choice. I'm not Neapolitan by birth, but by adoption. Therefore, I can boldly say that the pizza at A' Verace pizzeria is very close to the taste of the authentic Neapolitan pizza you can eat in Naples (though not at all pizzerias!). The wait staff isn't very experienced, but on a Saturday night, as you know, the people serving you might not be the best. However, they're all very friendly, and that makes up for their lack of experience.

Exceptional pizza, light with a high crust, beautifully airy. The tomato sauce is truly exquisite, giving it a touch of quality and making you taste Naples in your mouth. The fried pizza here is excellently made; trust me, this fried pizza has the same aroma and flavor as the one you'd eat in Naples. The pizza is rolled out beautifully, and the wood-fired oven really makes a difference. The tuna and onion pizza, for example, uses quality ingredients, and you can taste it! I only have one photo for now, but I think I'll take many more. Want to eat Neapolitan pizza in Tricase? A' verace is the place to go.

Nice atmosphere, clean and tidy. Friendly staff. Good pizzas, but nothing special and a little difficult to cut. It didn't seem like a classic Neapolitan pizza to me, but standard. Good ingredients. Too bad the waiter held them in place with his thumb when serving them, probably to keep them from sliding off the plate. I'd return them for hygiene reasons. Another flaw is the price, which in my opinion is excessive: a small glass of bitter liqueur costs €4.00-€4.50, and a dessert, the size of a coffee cup, costs €5.00-€5.50. Also, the drink, a Coke, served directly in a glass, isn't good. Bring me the bottle or can. I don't know what drink I was served. The chips, a small plate of the frozen kind, not specified on the menu but only verbally, were very salty and cost €4.00. They could improve. For these reasons, only three stars.

This is my first time at a pizzeria where they make Neapolitan pizza, and I find the dough to be not rubbery. The ingredients are fresh and of excellent quality. The dough is light and truly delicious. A little less pleasing, for my taste, is the decor, which feels like a trattoria and clashes with the very modern counter.
The lady who served us was very helpful and attentive. We'll definitely be back.
