A unique element is the infernot on the lower floor, a cellar dug into the tuff, a UNESCO heritage site, which adds charm to the experience. The menu highlights quality ingredients with dishes prepared according to tradition. The old-fashioned vitello tonnato is exceptional, with tender meat and a velvety, well-balanced sauce. The raw meat tartare is among the best I have tasted, chopped with a knife and served with rocket and flakes of cheese. The tagliolini with wild boar ragù stand out for their rich and tasty sauce, although with a few less juniper berries they would have been perfect. Also worth trying is Grandma's Russian salad, prepared with genuine ingredients and an authentic flavour. The service is professional and attentive, with trained staff available to advise. The prices are more than adequate for the quality. Ultimately, Ai Due Olmi is an excellent choice for those looking for authentic Piedmontese cuisine in a welcoming environment. Excellent veal with tuna sauce and tartare, excellent wild boar ragù and an infernot that makes the visit even more special. Highly recommended!
