Folie À Deux falls into the second category, thanks not only to a relaxed atmosphere and excellent cuisine, but above all thanks to Niccolò, the real ace in the hole of this place. I don't know what his secret is—intuition, experience or an innate talent as an alchemist—but he manages, just by looking at a person's face, to suggest the perfect match. I was skeptical, but he totally got it right with me. He brings me a dessert (already delicious), observes it for a moment, then returns with a rum that fits into the flavor as if it had been created specifically for that dessert. Will it be magic?
