04/05/2026: Dinner at Hashimoto's last Friday with my daughter... I'd never been there, but now I can say it's one of the few certainties in Rimini if ​​you're looking for authentic Japan. We happened upon it during the week of the ramen set menu: after a mixed appetizer, we received some truly exceptional grilled gyoza. Next up was the ramen, steaming hot, with a thick broth, light (they don't use pork) but flavorful, the result of a very long cooking time, a world away from the usual all-you-can-eat options. We drank sparkling water and finished with their green tea (without theine). The place is small, very intimate, and the simple decor makes you feel almost like you're in a private home in Tokyo. The service was prompt and discreet, accompanied by interesting explanations from Mr. Hashimoto himself, who is truly a curious character to chat with at a leisurely pace. The price of 45 euros per person reflects the quality and freshness of the ingredients, as well as the expert craftsmanship in the kitchen. It's a place where you can feel relaxed and serious, ideal for those who appreciate authentic flavors and professional, no-frills management.
