The fish was obviously incredibly fresh! We loved all the dishes we ordered. The grilled char and the spaghetti with bottarga deserve a special mention.
We booked a few days in advance because there were limited seats. The atmosphere was family-friendly.

Amneris and her husband will amaze you with a menu featuring char, which they farm themselves.
A trio of appetizers, including marinated, smoked, and "in sarà" char, will tantalize your palate with delicate and original flavors.
The risotto with diced raw char fillet is a delicacy not to be missed, while the grilled char will be a worthy conclusion to a meal that won't weigh you down but will leave you extremely satisfied.

A small family-run tavern in Cavalese not to be missed by anyone passing through for lovers of trout and Salento cuisine masterfully cooked in all its versions. Quiet family atmosphere, excellent service and attention and friendliness to the customer, right quality/price ratio. A pleasant discovery to be repeated.

An absolutely positive experience. We had the trio of appetizers, the risotto with char, and the breaded fillet steak. Everything was delicious. The prices were fair. Reservations are recommended because the place is small. The beer sorbet with salted caramel and almonds, and the homemade grappas were also excellent. Highly recommended!

We are on vacation in beautiful Trentino again this year and, of course, had to stop by Troticultura for dinner. I have to say, nothing has changed. The food is still as delicious and exquisitely prepared as it was a year ago. The ambiance is just as cozy, and the service from the hostess is still extremely warm and friendly. We felt completely at home at Troticultura Vinante again this year. If you love top-quality, freshly prepared trout dishes (there are also non-fish dishes, of course), then this is the perfect place for you.

We were craving fresh trout and went straight to a small restaurant on a trout farm. It's a small family-run business located near Tesero. It's a small restaurant with only a few tables and is incredibly cozy. The hostess, who was also the cook, welcomed us warmly and very friendly. The menu, of course, revolved entirely around trout and the char, which is also farmed there. We started with three types of antipasti: smoked sau blanc, cured trout, and trout marinated in a light vinegar with capers. This was served with fresh, warm bread and small tostadas. This was already very good, and the starter portion for one person was easily enough for two. We then ordered grilled trout with a shredded potato rösti and a young white cabbage salad. The food clearly showed that great importance was placed on regional, local produce. We thought that was very good. The food was delicious, and the trout was grilled to perfection. This was accompanied by a lovely bottle of Gewürztraminer from Trentino, which we thought was inexpensive. We felt very comfortable at the Troticoltura Vinante and can only recommend this lovely family business. We hope to have as many satisfied guests in the future as we did.

What can I say, the lady cooks in a divine way, char and trout cooked in various ways, one better than the other.
A special note goes to the quality of the fish that is raised by them, without a doubt the best I have ever eaten and this is said by a lover of trout and char.
