Massimo Stella with Bacco has made his dream come true, which is also the dream of those who will be his guests, to eat really well and be in company in this beautiful place. Unsurpassed carbonara and really tasty home-made dishes. From the appetizer to the desserts, everything is excellent. I recommend it to everyone and...enjoy your meal.

Trattoria da Bacco è una vera e propria oasi per gli amanti della cucina romana verace. Il locale accoglie con un’atmosfera calda e familiare, tra tavoli rustici, poesie scritte alle pareti e il profumo irresistibile che arriva dalla cucina. Il menù è un tributo alla tradizione: buona la Gricia, con la pasta ruvida che trattiene ogni sfumatura del pecorino. L’ Amatriciana ha un perfetto equilibrio tra pomodoro e guanciale croccante, mentre la Carbonara è semplicemente da manuale, la migliore che abbia mai mangiato. Tra i secondi, imperdibile la trippa alla romana, semplicemente sublime, e l’abbacchio al forno, che fa concorrenza al piatto principale. Il tutto accompagnato da un’ottima selezione di vini laziali, con prezzi onesti e un servizio sempre professionale e sorridente. In definitiva, Trattoria da Bacco è una tappa obbligata per chi vuole riscoprire i sapori autentici della Roma di una volta, senza fronzoli ma con tanta anima, e si trova nei pressi del Santuario della Mentorella. Perfetta per una cena tra amici o un pranzo domenicale in famiglia.

Here is a possible review: "Trattoria Bacco: a culinary experience with some false notes I went to Trattoria Bacco with high expectations, but unfortunately the service did not live up to my hopes. The cheese arrived already served on plates, which made me feel a little as if we had been "served" without having been "welcomed". Also, some dishes we ordered were not on the menu, which was a bit strange. And the portions of the second courses... well! Despite these minor inconveniences, the food was still good and the atmosphere was welcoming. I hope that next time everything will be more "tuned"! Tip: pay attention to the service and portions! Excellent Easter Monday lunch, welcoming place and hospitable staff. Traditional dishes with an authentic flavour, each of us had the pleasure of tasting flavors like never before; some beans with pork rinds, some tripe, some coratella and some the first Romans. Absolutely to be recommended, a place to gladly return to to continue to be amazed by tasting the cuisine's offerings.

If you pass by Pisoniano, you can't miss Trattoria Bacco: a place that smells of authenticity and tradition. We ate the best carbonara in Rome - creamy, tasty and above all made with love by Massimo, as only those who really know Roman cuisine can do. The atmosphere is quiet, welcoming, it almost feels like being at home. Special thanks go to our waitress, Vivien (I hope I spelled her name correctly), of a kindness and skill that is rare to find. Always smiling, attentive and professional, she made our lunch even more pleasant. If you are looking for a place to eat well, relax and feel pampered, Trattoria Bacco is the perfect choice.
