08/11/2025: We recently had the pleasure of dining at Saporium Firenze, and the entire experience was memorable from start to finish. Nestled in a refined and beautifully curated setting, the restaurant immediately stands out for its atmosphere – elegant yet warm, with an attention to design that sets the tone for what’s to come.
The service was truly impeccable. From the welcome to the final goodbye, the staff was attentive, knowledgeable, and always professional, without ever being too formal. Every detail was carefully managed, making us feel genuinely looked after throughout the evening.
We decided to go all in and try all three tasting menus – vegan, seafood, and meat – and it turned out to be a fantastic way to explore the full range of the chef’s creativity. The presentation of each course was visually stunning, with a clear focus on seasonality, balance, and technique. Most dishes were truly excellent – refined yet flavorful, innovative without being excessive. There were a couple of courses that felt a bit less convincing in terms of flavor combinations or impact, but these were rare exceptions in an otherwise impressive sequence.
A special mention goes to the cocktail bar next door, owned by the same team. We highly recommend arriving a bit earlier and enjoying a pre-dinner drink there. The mixology is on point, the ambiance is sophisticated, and it sets the mood perfectly for the evening ahead.
In summary, Saporium is a fine dining experience that lives up to expectations – thanks to the quality of the ingredients, the care put into each dish, the beautiful setting, and a staff that clearly takes pride in what they do. We had a wonderful evening and we’re happy to recommend it to anyone looking for something special in Florence.
28/10/2025: My husband and I were in Florence for our anniversary and were lucky enough to obtain a lunch reservation at Saporium. Given the intimate nature of the seating, it seems the dinner reservations would go quickly. The atmosphere and staff are incredible. The pride they have in what they do can be seen in every careful and thoughtful action and interaction with each guest. The decor is relaxing and serene, as if in the garden the delicious meals are being prepared from. Everyone was incredibly attentive and the pace of meal was completely on point. We have been to Michelin star restaurants across the US and Italy, I have to say I was shocked that they don’t have more Michelin stars with how delectable the food is. Saporium is only rivaled in my opinion by Eric Ripert’s La Bernardin. We tried the chefs tasting menu, which was a cross amongst their other tasting menu options. Every course was as delicious as the last, not one of our ten courses disappointed. The flavors were perfectly harmonized and danced across our taste buds with every new bite. We could have stayed for hours, continuing to be treated to this culinary gift. We will be back to Florence and most certainly back to Saporium Firenze as we cannot wait to try a dinner service!
