An absolute gem. Currently (July 25) they do a lunchtime deals. €30 for any 2 courses, from Starters, First or Main menu. This is a terrific deal for a Michelin recommended restaurant. It is also only 2 mins walk from the Duke's palace, so very accessible. We paid 4 x €30, plus €30 for 4 x glasses of wine & 2 x large bottles of water.
Apologies for being crass and talking money but the Michelin designation indicates the food quality, i am merely trying to point out that this is a ridiculous bargain for any fine dining fan.

A three-course tasting experience, and I must say it was truly special. All three were delicious, made with carefully selected ingredients and paired perfectly. The staff were friendly and prompt, even with the wines.
The prices were reasonable considering the service and the central location.
The initial entrée and complimentary gift were extremely appreciated; they're small details, but they leave a smile on your face.
These photos show their onion with parmesan ice cream and the off-menu buffalo roast beef. Fantastic.

EDIT: After some time, I returned here and must say that the restaurant has not only dispelled any doubts I had, but I'm pleased to note that it has actually taken a significant step forward!
The two off-menu dishes with scorzone truffle were truly excellent. The tagliolini with butter and scorzone were textbook, simple yet mouth-watering; but where the chef truly outdid himself was with the buffalo roast beef with stewed Trevigiana cheese, truffle, and tomato mousse: a true delight.
Well done, they're very good; the service has also improved. The stars go from 3 to 4 without hesitation.
Attracted by the Michelin Guide's new entry, I came here for lunch. I was in a hurry and had to limit myself to the table. The off-menu appetizer (mortadella, shoulder salami, and burrata) was not bad; I expected more from the "fumo e fermenti" risotto (it's excellent, let's be clear, but I didn't find that special something you'd expect in one of the regions renowned for its risotto). The service, however, was attentive and courteous, and could also be improved. In short, there's a lot of potential; perhaps it just needs a little experience, given that there are only young people in the dining room (how nice). The absolute fairness of the final bill is noteworthy. The ambience is elegant and simple. Best of luck.

For this price, the appetizer and vegetable sides in every dish I tried on the personalized menu (4 meals) were inedible. The service and presentation of the dishes were excellent, and the desserts, pastas, and meats tasted excellent.

This restaurant is located in a side street close to the centre of Mantua and is included in the Michelin guide for Italy in 2025. The premises are modern and the food is excellent. The waiters lovingly describe the dishes on the menu and the list of specials and we enjoyed our meal here. I selected the typical Tortelli from Mantua to start choosing to mix the sweet and bitter varieties and followed this with a delicious and beautifully prepared guinea fowl and drank a local sparkling wine which the waiter recommended. For dessert we had a sampler including the local Sbrisolana with Zabaglione, tiramisu (very good indeed) and chocolate "salami." The meal was not cheap, but we felt that it represented good value, given the high quality of the dishes. Recommended!

Ovvero "zucchero aspro", ovvero come veniva chiamato il sale da queste parti.
Sono ragazzi giovani e gestiscono il loro ristorante con alcune proposte molto intriganti che prevedono la possibilita' di costruire personalmente il menu degustazione con libera scelta fra le proposte della "carta" e buon rapporto qualita'/prezzo.
Al netto della stuzzicante Carta dei Caviali, una "chicca" per estimatori.
Quindi ci siamo "costruiti" un antipasto di "Cipolla al gelato", ovvero cipolla bianca dolce al vapore, caramello salato, crumble di sbrisolona salata, polvere di cipolla bruciata e gelato al Grana Padano Riserva.
Piatto eccellente, che prende spunto da un altra ...cipolla caramellata di noto chef stellato, e questa opzione mantovana non ha nulla da invidiare a quella piu' famosa, straordinario l'amalgama tra dolce e salato.
Tradizione pura con il "bis di tortelli", gustati piano piano, delizia per il palato.
E poi lo storione con la sua crema grano e pepe e la polenta di riso.
Dolce: a tutta Mantova, con la pregevole torta di rose e la sbrisolona, purtroppo in versione forse troppo ...mignon.
Trattandosi di menu degustazione, le porzioni sono corrette (ad eccezione della sbrisolona), apprezzato l'abbinamento di cinque calici, quasi tutti vini del territorio, servizio puntuale, preciso e competente nelle spiegazioni.
Locale piacevolmente arredato con tavoli ben distanziati e alle pareti 18 orologi che intendono riferirsi ai quartieri di questa bellissima citta'.
