I had no complaints about the paccheri alla gricia and the coda alla vaccinara that I enjoyed, as well as the sautéed escarole with raisins. I must, however, highlight the Roman-style artichoke, which was more of a puree than an artichoke. I'm sorry to have to give a negative review of the service: despite having specifically asked for the dishes to be brought out so that all four of us could eat together, two of us were served long after the others had already finished their meals; I find this truly annoying, a shame.

Excellent restaurant near the edge of rome and the park of the aquaduct. There are excellent explanations of the food and rather unique tastes (like the mozzarella cheese sandwich). Friendly staff, quite busy.

The term "Hostaria" doesn't necessarily mean a refined, meticulously crafted environment. Otherwise, there's nothing to complain about, tastefully furnished without being overly ostentatious. The main flaw is the restrooms on the lower level, which are undoubtedly clean, but have a narrow staircase, partially occupied by a wheelchair-accessible access point.
The food: I had the "mozzarella in carrozza with 'nduja and honey," a very distinctive and pleasant flavor, not suitable for those who don't eat spicy food; the "carbonara" was excellent, with a suspiciously creamy egg topping, but the bacon was too browned for my taste; for a side dish, the "carciofo alla giudia," which, in my opinion, wasn't up to the standard of the other dishes, but wasn't bad.
The staff was always friendly and helpful; we never felt abandoned, but without being invasive. They were kind and willing to discuss any topic without deviating from their roles, a true rarity these days.

I had dinner with colleagues on a business trip.
The atmosphere was welcoming and refined, yet traditionally simple.
The staff was very kind and warm.
I ordered a first course, a second course with a side dish (all accompanied by an excellent house wine), and dessert and coffee to finish.
Each dish was excellently made and delicious (especially the carbonara and tiramisu).
Excellent value for money.

I had dinner with friends and I have to say it was one of the best dinners I've had in Rome! The staff was incredibly helpful and kind, and they made us feel welcome.
The cacio e pepe was a must-try, and the desserts were also excellent.
I would recommend this place to anyone looking for a quality dinner with the authentic flavors of Roman cuisine.
I'll definitely be back!

One of the best carbonaras, significantly improved from last year. Cacio e pepe is excellent, as are beans with pork rind.

Let me start by saying that we dined at Sellero & Ventresca twice during our 4-day stay in Rome, and that says it all :)
The restaurant was recommended by the host who rented us the accommodation, and I must say, the advice was invaluable! The food is traditional and spectacular, especially the first courses (thinking about their Carbonara or Cacio e Pepe makes me emotional), and of course, everything else is top-notch. The gluten-free option is a real treat.
Superb service, the staff were incredibly kind and attentive (perhaps they took pity on a group of seven extremely hungry, underprivileged guests).
Highly recommended!

Good Roman-style dishes. Carbonara and supplì al telefono are top-notch, but the tripe is also well-made.
