The carbonara was delicious. I saw a lot of locals eating there, which is a good sign to give it a try. Plus, it's right between Pisa Central and the Cathedral, right on your way.

I dare say that this place is a symbol of the university and proletarian Pisa. It has changed location, however, it is located 50 meters before coming from Corso Italia, on the right.
