We found it by chance. The owner (chef) and the girls who served us were truly lovely. The jokes, the service, everything was spot-on and very friendly. The food was exceptional. We finally found a real Hosteria with exquisite, high-quality food at a price we hadn't been this happy with in at least 15 years. It's an intimate, warm, small, perfect place. We had a wonderful time. Thank you so much!

As I often pass through Cotilia for work, when dinnertime approaches, a stop at Locanda delle Fonti is an opportunity to sample the excellent local dishes made with local produce. The menu varies each time, but always adheres to the excellent local tradition.

We had dinner at this restaurant and it was a wonderful surprise in every way. The atmosphere is refined and welcoming, making you feel immediately at home. We were greeted with great enthusiasm, warmth, and a truly rare kindness. The service was impeccable and fast, always attentive without being intrusive. The food? Delicious, carefully prepared, and served in generous portions that were completely satisfying. There's also a beautiful fireplace in the dining room, creating a warm and relaxing atmosphere throughout the evening. Special thanks to the owner, an extremely kind and helpful person: in addition to keeping us company with great charm, he gave us valuable advice for accommodations during our vacation. Simply exceptional! The food was exquisite and beautifully presented. The place was clean and welcoming. The service was impeccable. Highly recommended for anyone who loves to eat and laugh in good company!

The food was great and the Staff was very nice. Everyone was full and the price was very affordable. The Owner made sure we were well and took a shot limonchello with us at the end of our meal. We were the only tourists there and were very welcome. Overall a great experience and well worth the cheap price.

Emperor Vespasian went to the Cotilia Baths every summer, until his last. He died there on June 23, 79 AD. Today, however, even the imperial title would be of no use, because the Cotilia Baths, in the municipality of Sant'Angelo, along the stretch of the Salaria road from Rieti to L'Aquila, are closed. However, if you make your way there, perhaps drawn by the magic of nearby Lake Paterno, "umbilicus Italiae," I recommend the "Locanda delle Fonti" (after the still-barred entrance to the baths, a hundred meters to the left in the direction of L'Aquila). At the urging of the owner, Claudio, the appetizer (cured meats, grilled vegetables, and fried foods) comes naturally. Then, Hamlet of the menu, you have to choose. And I happily chose: ravioli with amatriciana sauce and wild boar stew. For dessert, a surprise: copete, a blend of almonds, honey, and sugar, originating in Southern Italy, or rather directly from Arab cuisine (qubbayt means "sweet preserve"). But the real highlight is the charm of Claudio, a Roman who followed the opposite path of the first Claudii: they came from Sabina, he returned from Rome to Sabina, to the delight of many palates.
