Returning to Colle San Bartolomeo is always like stepping back in time, to what was once one of the most important crossroads in our province. Hotel Ristorante La Pineta upholds tradition with excellent cuisine. A few dishes, but meticulous attention to detail: you immediately sense that everything is handmade with love. The first courses are excellent (I recommend the pappardelle), but the real surprise was the guanciale: so tender, it melted in your mouth without even needing a knife! The ambiance, reminiscent of a typical osteria where you feel at home (everything is spotless and smells fresh), and the excellent service deserve special mention. The lady who served us was extremely kind and attentive to every detail. An authentic place that I highly recommend to anyone seeking substance and quality.
