The most visually striking element is the central wood and iron spiral staircase connecting the ground floor to the spacious mezzanine area, an architectural detail I particularly appreciated. Having dined last night at a table near the large fireplace, its presence, combined with the owner's hospitality—always kind and helpful—helped convey a pleasant feeling of warmth throughout the evening. Considering that the business opened in October 2024, the remarkable work done by the owners in renovating the spaces and quickly developing such a refined cuisine is evident.
The culinary offerings follow tradition with a focus on raw ingredients. The selection of cured meats from the Arsenale, accompanied by a handcrafted giardiniera, stood out for their balanced maturation, particularly the prosciutto and coppa. The handmade meat gnocchi had the typical texture of handcrafted meats, with a flavorful and well-balanced filling.
Moving on to the main courses, the mixed boiled meats (chicken, cotechino, tongue, and rib steak) were cooked and cooked to perfection. The rabbit escalopes were interestingly executed, with the sage bread crumble adding a powerful aromatic note; however, the acidity—derived from a vinegary nuance perceived in both the meat and the turnip greens—was very pronounced, a detail that characterizes the dish according to a precise culinary choice.
The wine list deserves special mention: a handwritten notebook, neatly organized by region. At the owner's suggestion, we opted for a Barbera, which proved to be a perfect match for the dishes.
The service was attentive and professional: the attention to detail, such as the table cleaning between courses and the changing of cutlery, confirms an unpredictable care for the guest. The final bill was honest and consistent with the quality of the experience and the raw materials offered.
