An exceptional experience. We've been there twice within four days, first to celebrate our wedding anniversary, and then to bring our parents since they'd heard so much about it. It's impossible to say anything bad about Provalo.
The staff is friendly, always smiling and never says a word out of place. The boss, who takes orders, is incredibly friendly, personable, and helpful, and describes the dishes in such detail and emotion that you can tell he truly feels like he loves them.
Of course, if you go to Provalo, it's not just for the staff. The FOOD is simply fantastic. So many delicious treats that you'd want to come back every day just to try them all. They also have several GLUTEN-FREE dishes. The boss was quick to point out that they don't have a dual kitchen, but that where they cook gluten-free, there's no cross-contamination with gluten-containing dishes.
Another very positive note: the place was completely full, but the wait was practically non-existent; they were incredibly quick.
I can only recommend it to everyone and we will definitely see each other soon, very likely on August 15th since they are also open that day and they don't have a special menu, but everything à la carte like on any other day of the week.

We went as a couple and ate the classic mutton skewers, vegetarian and meat bruschetta, and cheese selections accompanied by various jams, all exquisite and carefully served. The place was very nice and welcoming, with super friendly, helpful, and polite staff. Finally, they offered us a limoncello and an amaro. I paid around 30 euros. Truly very satisfied.

Given that I'm a regular at the restaurant, Provalo surprised me again last night. I'd say it shocked me; the level reached with the handmade liver and onion skewers is "exceptional": tender, flavorful, and irresistible when paired with the onion. I must confess, I'm not a fan of liver in general, but in this case, I'm a convert. Leo, the owner, did a meticulous job that hit the mark.
Last night we had a mix of Black Angus, mutton, and liver; perfectly cooked, the meat tender and succulent. Skewered potatoes and corn were the side dishes. A slice of skewered parfait with chopped hazelnuts and chocolate rounded out the evening.

A fantastic experience! Besides the truly delicious food, which is meticulously prepared down to the smallest detail, the staff ensures a perfect experience from start to finish. The owner, with his descriptions of all the dishes on the menu, provides excellent advice on how to best enjoy it. The venue is also very beautiful and welcoming. I highly recommend it!!!
