It's my second visit. Excellent experience this time. Not that the first one wasn't enjoyable too, but I still had some doubts.
In reality, I have understood that traveling "à la carte" always gives me a better experience than the tasting menu (a choice that I almost always prefer on the first visit).
I found greater balance and maturity in all the proposals. A level of the (numerous) amuse bouche at times higher than the main courses.
On all dishes, the orange sweetbreads and raw prawns shine. Also mentionable for the beer-glazed turcinieddhi.
If a note must be made, the desserts (for my taste) are a step below everything that precedes. And what follows, given that the real sweet note is pleasantly left by the amuse bouche that closes the journey.
Selection of wines and spirits up to the level now achieved.
Trained and present staff. Adequate prices.
Absolutely deserved star.

Really everything very excellent. Dinner in a small, but warm and welcoming environment. Took the tasting menu: fabulous! Very kind waiters. We met the chef: an exceptional person.

I don't consider a Michelin Star to weigh as much nowadays as it used to but in the case of Primo it actually falls short.
Every detail is well taken care of.
Primo doesn't have any fancy/flashy signs outside and it's very small so we didn't notice it the first time we walked by.
When you arrive you have to ring the bell to be greeted by a member of the staff.
The venue is not big by any means and they run a very small operation, when it comes to staff and clientele, catering only to 6 tables at a time. From those 6 tables there were 5 couples (including us) and a family of 4.
The lights are dim and the decoration is minimalistic at the most but the service is excellent and the food even more.
We ordered the 10-course tasting menu and decided to try one of the local wines from Puglia. It was very refreshing to look at the wine list and know that quality doesn't have to leave you bankrupt. Anyway, we asked for some guidance and the sommelier recommended a dry white wine (price was 28 Euro).
We opted out of some of the items from the tasting menu and they were replaced by superb fish dishes. Chef Solaika Marrocco is the Queen of the Sea! Every fish or seafood dish they served us was PERFECT.
Approaching the end of a beautiful feast we had finished our wine. Last dish was lamb so the waiter suggested to give us a glass of red to pair with it. Both the lamb and the wine were a match made in heaven. The wine was so good i ended up buying a case and had it shipped home.
After dessert we had the chance to meet Chef Marrocco in person. She was super nice and very interesting. Told us about her plans to experiment with some foods not from the region... we complimented her on her creations. Truly a delight!
Can't wait to see what the future is holding for her as we will definitely follow her culinary career closely.

I had the pleasure of choosing the "100% Primo" menu together with my wife and I can say with certainty that it is not just a dinner, but an authentic sensorial journey created by the Chef. Since my wife is from Puglia and I am from Liguria, we lived a unique culinary experience: she rediscovered the traditions of her native land in a modern and refined way, while I was able to immerse myself in the typical flavors of Puglia, reinterpreted in a starry way. An extraordinary experience that I highly recommend to all lovers of haute cuisine.

Quasi la migliore esperienza avuta in un ristorante stellato. Accoglienza perfetta. Atmosfera perfetta. Abbiamo scelto il menù da 7 portate con wine pairing e non c'è stato nulla che non ci sia piaciuto. La chef è una ragazza timida ed educatissima che a fine cena passa a salutare gli ospiti e a raccogliere feedback. Complimenti a tutta la crew, speriamo di ritornare

Small starred restaurant in Lecce, what a surprise. A pleasant discovery for this one-star restaurant, a tasting menu of great finesse with surprising blends. I particularly liked the fact that they don't serve typical dishes like pasta or grilled meat (which is hard to find in Italy in general). I also appreciated the fact that my dietary preferences were taken into account (lactose-free and/or gluten-free). The chef has adapted very well. His cuisine is refined and delicious with quality products. I recommend the 7-course menu in order to fully understand its cuisine and its capabilities. The service is impeccable. I can't wait to discover the terrace since I was there in winter.

This is one of the best Michelin star restaurants we’ve been. And we’ve been to many. Every dish was EXCELLENT! Above and beyond our expectations in terms of combinations of ingredients and taste. IMHO this restaurant deserves a two star and the chef is only 28! She’s one to watch!

I book for Monday 6 May with many expectations....repaid!! (So much so that I rebook for Wednesday) Very high level......I always expect this and more when I return!!
