Very positive experience. Venue with around twenty seats and minimal furnishings. The very young chef demonstrates remarkable creativity and mastery in the preparation and combination of ingredients, all of which are of the highest quality. We followed a course of 11 courses, all as usual in a starred restaurant, small in size and mostly oriented towards the vegetable sector (with the exception of one mackerel course and one quail course) and strongly linked to the territory. Like all research cuisines, satisfaction can certainly be subjective: personally I have to say that we really liked the whole experience, at such a level that it doesn't disappoint in the presence of those who already have two stars. Impeccable service, precise and without being "intrusive", and the preparation of the dining room staff regarding the ingredients and wines (very rich and intriguing list) is truly worthy of praise. Well done everyone, you have what it takes to aspire to even higher goals. And you deserve it because you convey the 3Ps: preparation, professionalism, passion. Very interesting general quality/price ratio.

Partiamo dal motivo per il quale tolgo un pallino al punteggio finale. Prenotato online e da tempo il menù 100% Primo declamato a 160 euro. Ci ritroviamo con decisione autonoma e senza riscontro alcuno un menù servito da sette portate. Bene. Il menù da sette portate sempre sul sito viene riportato a 130 euro. Tutto nella norma direte. Beh, proprio no perché Il menù da sette portate ci è stato fatto pagare 150 a testa. Evidentemente l’altra sera avevano ritoccato i prezzi senza aggiornare il sito😅 al momento della prenotazione online. Bene. Percorso degustazione con scelta di abbinamento vino. Non è stato esplicitato alcun prezzo, non presenti nemmeno sul sito. Ciò detto, non battiamo ciglio perché preferiamo evitare inutili discussioni. Piatti comunque di buona esecuzione con qualche spunto discreto tendente anche a valorizzare il territorio. Peccato quanto riportato in premessa perché il gusto in fin dei conti è piacevole ma la gestione dei prezzi un po’ meno.

Very good address. Intimate [only 6 tables]. Gastronomic dishes including revisited classics while keeping their identities. Impeccable and discreet service. We had a great time there

We had one of the best meals we ever had. You can see that the chef, Solaika is very dedicated to her job. All bites were amazing. The service was very good and informative. The wine selection is also excellent. The restaurant is small and the atmosphere is unique and fine.

Amazing one Michelin star restaurant!!!! Only 15/20 seats in total, there is a very high staff/customer ratio! Super intimate, quiet and also very very nice place, with a wall equipped with wine and the classic Apulian vaulted ceiling. Speaking of the cuisine, chef Solaika Marrocco accompanied by Manuel Apollonio are formidable!!!! A succession of emotions and tastes released by the unique dishes of the Apulian tradition and revisited in a… exquisite way!!! So expect some dishes of offal... The wine list isn't bad either, I would include a few more wines from other regions of Italy.

I don't consider a Michelin Star to weigh as much nowadays as it used to but in the case of Primo it actually falls short. Every detail is well taken care of. Primo doesn't have any fancy/flashy signs outside and it's very small so we didn't notice it the first time we walked by. When you arrive you have to ring the bell to be greeted by a member of the staff. The venue is not big by any means and they run a very small operation, when it comes to staff and clientele, catering only to 6 tables at a time. From those 6 tables there were 5 couples (including us) and a family of 4. The lights are dim and the decoration is minimalistic at the most but the service is excellent and the food even more. We ordered the 10-course tasting menu and decided to try one of the local wines from Puglia. It was very refreshing to look at the wine list and know that quality doesn't have to leave you bankrupt. Anyway, we asked for some guidance and the sommelier recommended a dry white wine (price was 28 Euro). We opted out of some of the items from the tasting menu and they were replaced by superb fish dishes. Chef Solaika Marrocco is the Queen of the Sea! Every fish or seafood dish they served us was PERFECT. Approaching the end of a beautiful feast we had finished our wine. Last dish was lamb so the waiter suggested to give us a glass of red to pair with it. Both the lamb and the wine were a match made in heaven. The wine was so good i ended up buying a case and had it shipped home. After dessert we had the chance to meet Chef Marrocco in person. She was super nice and very interesting. Told us about her plans to experiment with some foods not from the region... we complimented her on her creations. Truly a delight! Can't wait to see what the future is holding for her as we will definitely follow her culinary career closely.
