Superb food. It's a shame we had to wait a bit, but it's understandable since it's Sunday. It was all overshadowed by the excellent food!

14/10/2025: Republic in Gallarate offers a different take on the traditional aperitivo. For €11, you can get a cocktail plus a mixed platter with sushi. The atmosphere is modern and welcoming (I'd improve the lighting), perfect for an evening with friends. They also offer à la carte dishes; the grilled spaghetti is very good. The service is courteous and professional, and the prices are average. For those looking for a different aperitivo with a bit of sushi to nibble on, Republic in Gallarate is definitely a recommended and original choice!
