Delicious, hearty traditional dishes, just steps from the Christmas markets.

It's a fairly touristy place, but we found exactly what we expected. Everything was excellent.

The food was delicious and the portions were generous. We ordered some dishes that weren't on the menu because we're vegetarian, and they very kindly made the necessary adjustments. We loved it! Or

We visited Paulaner Stuben in Bolzano for two consecutive days (January 3rd for lunch and January 4th for dinner), and the fact that we returned says it all: a truly positive experience. The restaurant is located at Via Argentieri 16, very close to Piazza Walther (about 200 meters, a 3-minute walk). The atmosphere is wonderful, Bavarian/Munich pub style, rustic and warm, perfectly in keeping with the atmosphere of Bolzano. It's not just a beer hall, but also a real restaurant where the food is excellent. First day (January 3 – lunch) We wanted to focus on traditional dishes: • Tyrolean snack with PGI Speck Alto Adige, local cheese, and Rösti potato croquettes • Four first courses with four local specialties: Shepherd's macaroni with ragù and wild mushrooms, Tyrolean cream-filled spinach gnocchi with speck, Tyrolean ricotta and spinach ravioli with melted butter and parmesan, handmade speck dumplings with wild mushrooms • Beef goulash with speck dumplings Everything was truly exceptional, perfect for those who want to sample traditional South Tyrolean cuisine. Second day (January 4 – evening) We returned specifically to try other dishes: • Focaccia Dolomiti (similar to a pinsa, but rectangular) with mountain cheese, Speck Alto Adige PGI, and porcini mushrooms • Pan with fried eggs on crispy speck and sautéed potatoes (We ordered two pans, and both had two eggs per portion, a detail not to be taken for granted) The drinks were also very positive: the Coca-Cola on tap was different from the standard one, probably made in-house, and really good, served in a glass with lemon. Service and Organization Another strong point of the restaurant: extremely fast service. Despite the high attendance (Christmas market season), orders were taken promptly and the dishes arrived surprisingly quickly. The restaurant operates continuously, non-stop, which is rare these days. There is a form on the website for reservations, but during busy periods, reservations are only confirmed by email. On both days, we showed up without a reservation, and the owner (presumably him) found us a seat: a 15-minute wait the first time, zero the second. We returned twice because we were so impressed with the atmosphere, quality of food, speed of service, and hospitality. Highly recommended if you're in Bolzano.

Characteristic atmosphere, classic beer hall style with traditional dishes, good value for money and friendly, fast staff.

The food and service were very good. I tried the roasted ribs with french fries, which were wonderful. My wife tried a hamburger that was delicious. I highly recommend it.
