The wafer is incredibly crispy, perfectly fragrant, and perfectly fried without being greasy. But it's the filling that makes the real difference: a silky, dense ricotta cream, sweetened with just the right amount of sugar, enriched with dark chocolate shavings, chopped pistachios, or even a touch of candied orange peel that will have you closing your eyes in ecstasy.
