The tuna tartare and egg on Taleggio fondue are extraordinary. Be sure to try the Euganean wild boar fillet carpaccio, flambéed with a balsamic reduction and drops of goose liver and Paduan chicken. The Vialone Nano delle Abbadesse rice with seven Colli mushrooms is delicious, as are the seven-grain bigoli pasta with hints of undergrowth and chestnut crumble.
