Good value for money and welcoming environment.
The self-service service and the menu change need to be reviewed (why did you remove the sandwich with the seared tuna steak?).

Very kind and helpful staff. Prices are ok.
Posto senza dubbio originale e menu molto assortito, ma il panino è davvero piccolo e molto caro rispetto a quello che mangi. Un peccato

Intrigued by the advertising that reached me on social media, I decided to try this place that cooks fish-based dishes and sandwiches. I tried the sandwich of the month, I must say that the ingredients were fresh, full and very tasty sandwich, but the too many sauces, in this case mayonnaise, made it too heavy and covered the flavor of the other ingredients. Overall, good but not very good. Prices a little high. You order at the register and wait for the device they give you to ring, notifying you that the sandwich is ready. Young and smiling staff.

So, then, then... 4 stars which are the average between 3 and 5 stars, ratings that I gave in my many experiences, before the last one (after which I never went again).
I can say that I have tried almost the entire Panamar menu, with the exception of a few sandwiches: I like the concept, I like the atmosphere, I like the education, I like the idea (which later evolved into Barittico). In short, I like Panamar. I tried all the tartares, even the one with prawn (although I'm not crazy about the latter) and they were all impeccable: the salty-sweetish combinations are very well balanced. I tried the monkfish and fell in love with it: it is my absolute favorite dish. Let's get to the "sad" notes: among the dishes of the day, I once chose one based on roasted cod and burrata. The combination was also interesting; the realization a little less. Prepared a bit "summarily", with this "sana sana" (as they say) burrata perched on this roasted cod. In short, I felt like I had gone to Vannulo to eat mozzarella: the burrata had abnormal and disproportionate dimensions compared to the piece of cod and, in the end, it also remained on my stomach. The dish had no balance.
Then, through the "let us know what we can improve" style leaflets (which I find very appreciable) I have repeatedly advised to vary the use of fish; the fish universe is varied, but the menu is full of salmon, tuna, cod and octopus, in every possible and imaginable variant that can be combined or worked with. For a customer who wants to be a regular, it becomes difficult, after 3 times in a row, not to have tried the entire menu.
Last very discordant note: the last time I ate the usual chip with raw tuna and both my girlfriend and I felt bad with our stomachs; later a couple of friends (who had had lunch on the same day as us) told us the same thing. I never returned from there, unfortunately, out of fear more than anything else and because, as I said before, the menu is repetitive.
**UPDATE**: we are back from Panamar; very pleasant re-freshening of the layout, communication and design (result of ItalyFoodPorn consultancy). What can I say: the tuna parmigiana is amazing, as good as if my grandmother had cooked it. The Nerano cream in which to dip the tuna meatballs is also excellent (I didn't find the ones in carbonara sauce on the menu which, I hope, they will introduce again after the summer). The revisitation of the salmon tartare is also magnificent (more like a finger food than a real dish to tell the truth), topped with soy tapioca pearls and wasabi wafer.
I had high expectations for the LimitedEdition based on swordfish burgers, dried tomato pesto, feta etc. but it didn't meet expectations: poorly layered (compared to the others on the menu) and each ingredient went its own way.
Overall, it remains 4 out of 5 stars.
But we will come back again.

Excellent quality of ingredients, perhaps too many sauces that make the pleasure of the fish fade. Nice, fresh atmosphere with very friendly staff. I recommend the chef's aperitif. Good value for money

Very unusual place and cuisine. Fish.
I liked the tartare, cod nuggets and potato dish with fish. I didn't like the shrimp, they looked like they were burnt to charcoal. Like chips. There is a siesta, they close at 3 o'clock and open at 6 o'clock.
The place is unusual, I liked it. Delivery is fast. There is wi-fi.
