A place out of time, out of the center, out of mind. The innkeeper is one of the most knowledgeable "noses" I have met, he smells scents that a quadruped truffle hunter takes notes in shorthand. Each wine is selected according to rigorous parameters of organoleptic common sense and with the right amount of madness and foresight. You can discover wines from ancient Roman colonies such as Burgundy, Alsace, the Jura, Champagne but also Piedmont, Veneto, Tuscany, Magna Graecia, Mars, Venus and Saturn, for the latter only in the period of alignment of the galaxies due to shipping costs. You can also nibble something, but only products of "village" level in its most important sense. Flavor and substance. Frequented by the people (the Roman nobility probably would not understand the local language).
