Reviews, even negative ones, should always be constructive. Nothing should be taken away from the restaurant, the ambiance, or the quality of the ingredients—all of which are high-quality.
However, when you pay €4 for a cover charge and around €90/100 per person, you expect the price to be justified not only by the cuisine, but also by the service. The overall value should be the result of both.
In our case, we received our appetizers before the requested wine arrived. The hot and cold appetizers didn't have any changes, and we had to repeat some requests several times, even just to get the drinks.
Furthermore, the sommelier's mistake resulted in a glass of wine being spilled on a guest's dress. I'm not criticizing the mistake—it can happen to anyone—but the handling of the incident: the only remedy was a lemon towel, with no further attention or change to the bill.
At these price points, you expect service to match the quality of the cuisine.

I haven't tried Nimau before, but it's very good. It's a bit hidden on a side road, but in our case, we found it because we were staying at a nearby hotel. A very good choice. The waiters were very helpful and attentive.

We came here on the recommendation and guidance of a friend who's a regular at the restaurant. The setting is elegant and clean, with a great atmosphere, including a small "museum" displaying the meat being aged. We tried the smoked beef tartare, which was excellent and melted in the mouth. On their recommendation, we tried a menu featuring two types of meat, as recommended by them, and seasonal vegetables as a side. The meat was served rare, thinly sliced, along with lava stone if we'd preferred to cook the slices more. The quality was sublime, the aromatic flavors perfectly balanced, with no one flavor overpowering the other. Of course, you can also choose less expensive options than the one we chose that evening, as the cuts offered were so generous. In short, if you're a meat lover, you can't miss this place. I'll definitely be back.

Per pura casualità ci siamo trovati a mangiare in questo ristorante di carne, e devo dire che, per nostra fortuna, è andata benissimo. Prezzi nella media, cottura della carne perfetta per tutti, patate e verdure impeccabili. Che dire, ci tornerò sicuramente.
