Always a confirmation for those who love the culture of expertly prepared sushi!

Welcoming place Relaxing music Sushi Gio: the best dish, followed by the rolls (especially the trio of tuna rolls). The nigiri are good, but not exceptional and small (especially the red shrimp and sea urchin ones) considering the price. The miso soup is very salty. Nothing like the miso soup you eat in Japan in terms of flavor and texture. Yaki soba and hosomaki are tasty and delicate; excellent quality. The quality of the oil is seriously low and doesn't reflect the high standards and price of the place; being in Puglia, one expects excellent quality oil; otherwise, it would be better not to use it at all to avoid muddying the flavors of the dishes.

Lovely evening in Bitonto. Excellent Japanese restaurant. We asked for a tasting menu and we weren't disappointed. If you're in Bitonto, this restaurant is a must-try.

Finally, some à la carte sushi that reminded me of the flavors of Japan. It's not identical, of course, but it's the only one so far that comes close. Excellent quality, attention to detail, and balanced flavors. An experience worth repeating.
