We ate very well, they recommended an appetizer of tartare and carpaccio with chopped pistachios and it was fabulous. Then we ate two different cuts, both good and we finished it all off with a very good cheesecake

Usually when I give a negative opinion and I can I do at least a second pass to re-evaluate the opinion and so I did.
Therefore the evaluation expresses the result of 3 Florentine midweek lunches as per the menu.
January 15, 2024 (negative)
July 19, 2024 (intermediate)
September 16, 2024 (positive)
The Fiorentina of January 15th was tough, too tenacious, evidently too fresh.
The Fiorentina of 19 July was overall positive but the taste was not fully expressed.
Fiorentina on 16 September, very good meat.
The meat was not present on the preparation counter and was probably taken from a cold room adjacent to the room with the tables.
There was already a business lunch that was finishing and the manager probably only put a small quantity of steaks out of the fridge in addition to those of the people who had booked. (it wasn't late when we arrived at 2pm)
The meat, although fresh from the fridge, was prepared to perfection, in fact it required a much longer time to cook (since it is not at room temperature) it was all prepared on the plate already cut
The cut made it possible to soften parts that would otherwise have been hard due to the thermal shock and relative contraction of the muscle fibers.
Very good master griller, but at 2pm a steak for a hungry customer must still be available out of the fridge.
All 3 Fiorentinas, even after some time from each other, have similar weight and size, which suggests a product supply circuit that is not differentiated by type of animal, but homogeneous and standard.
In fact, you don't pay for meat by weight, but by portion.
All 3 Florentine steaks were cooked and presented to perfection both in terms of sealing the meat and salt on the surface.
All 3 Florentine steaks are not made from matured half-carcasses (because they arrive already sawn) nor are they then matured individually in the restaurant's fridge.
In general in my opinion:
● Low price for a 700/800 gr steak.
● Excellent cooking
● Unmatured meat,
● Homogeneous products cannot be found and the manager does not communicate a possible different origin of the products linked to the various breeds (Chianina, Romagnola, Marchigiana)
In my opinion it is strongly advisable to book and communicate the number of Fiorentina, so as to be able to give the griller the opportunity to prepare them to perfection.
Don't arrive later than 2.15pm, even if from Google the place closes at 3pm, at 2.30pm it happened to me more than once that I wasn't able to eat.

I have already been to this place on other occasions and overall I found myself well. I must say that it is definitely better to get a steak weighing over 1kg and share it with a friend rather than taking 2 cuts like we did today and finding ourselves paying an extremely high amount compared to the dish consumed. Today get up from the table dissatisfied. We will evaluate whether to return..

Excellent place for those like me who love meat, I underline that they cook mind-boggling lamb, in addition to the various types of meat, it is not a cheap place, but given the excellent quality meat I highly recommend it.

Siamo stati a cena in questo locale di lunedì, nonostante fosse mediamente pieno, il servizio e l’accoglienza sono stati ottimi ed eravamo in 16, hanno gestito il tutto al meglio. Ci hanno servito delle bruschette di benvenuto molto buone, un tris di affettati crudi ottimi ed infine la carne, personalmente ho preso una fiorentina al sangue con contorno misto. Veramente ottima, sia nella cottura che nel gusto. I dolci purtroppo non erano un granché, da rivedere. Ci tornerei sicuramente e consiglio per chi ha voglia di un’ottima carne!!
