02/06/2026: I had dinner at this restaurant with my girlfriend after a while. Upon my arrival, we were greeted by a new manager, Davide, who was kind and courteous. After a long wait for our order, our dishes arrived, and I must say that the quality of the raw ham is evident, and I believe it to be the best in the Parabita area and the surrounding area. The rolls are also very carefully presented and all excellent. The tuna tataki and the raw ham, whether sashimi or tartare, are top-notch. I think the hot dishes need some work. They're not very flavorful and a bit bland. I'm not giving it 5 stars because I believe there are some flaws that I hope will be seen as constructive criticism, as small things can lead to people opting for other restaurants. 1. The wait. I don't think it's appropriate to wait 25 minutes to order and almost 20 minutes to pay. I think the manager should be more present and attentive, especially regarding these issues. 2- The quantities of raw fish. Compared to the previous management, I don't think it makes sense to order a tuna or salmon tartare and find a small sample of it in a bowl. I basically have to order three tartares to eat almost one. And consider that with raw fish, you only have three possible orders: tartare, sashimi, and gunkan. Yes, the latter are considered raw here. In my opinion, these are questionable choices that need to be reconsidered, especially since the tartares are truly small samples. I hope that if you were to order a takeaway tartare, the quantity wouldn't be the same as the one served at the table. Otherwise, it would somehow discriminate against those who sit down. Otherwise, I recommend it, and I repeat, I hope it's seen as constructive criticism. Kudos to the Gentile staff who managed the dining room perfectly.
