I had heard about this pizzeria from my son who lives in Trastevere and he told me it was very good. Then I discovered that there is also one in Ponte Testaccio and so last night we tried to book but to no avail then we decided to get the pizza and take it home. So usually when you bring a pizza home it's cold and rubbery. Well, no Elementary pizza! IT CRACKED!! Incredible, this is the real pizza of Rome, it must crack when you eat it. Make a monument to those who built these pizzerias. I'll start by saying that mine was a capricious one, notoriously soft, but no. My wife ate the classic margherita and laughed because it crunched with every bite. The supplì filled with mozzarella are also large and also very ignorant (in Roman jargon clearly). Standing ovation. If he writes like that, well. From today our number one, I'll leave the others to others.

The place was recommended by the tour guide, a very good place. Tasty pizza, quick order fulfillment, we didn't have to wait long. The service was very nice and polite, which made the meal even more enjoyable.

I've only recently been writing reviews of the places I try and for the few reviews I've written I've always given 5 stars. The reason is simple. When I go out to try a restaurant, whatever it is, I want to go without fail. I get information through word of mouth from friends and relatives and I read reviews on the web, the well-written ones, which, however difficult it may be to put down in words, communicate the flavors and sensations of what you ate.
In my opinion, as a person who grew up in a family context where cooking is considered an important element of life, when you go out to eat, borrowing a football concept, the only good result is victory, at most an honorable draw, defeat is not an option, otherwise I'll stay at home and cook.
So this Saturday I went to win at L'Elementare in Trastevere.
I went to taste their fried foods which I can confirm are of the highest level.
The choice between the classic supplì fell on supplì al telephone, tonnarello cacio e pepe, supplì lasagna, spaghetti ajo e ojo and among the special provola e pepi in costaria, all accompanied by an excellent Keller beer.
Having said that beer with fried food is very good for us, it also fulfills the function of cleansing the palate when moving on to the next tasting, an important thing such as the sequence in which the fried foods I have listed should be tasted, in consideration of the flavors that the ingredients with which they are made.
Very importantly, all the fried foods are freshly prepared, so they arrive hot and unheated, and you can taste it.
Let's start with the classic supplì which comes with a thin, crunchy and dry breading. Inside the sauce is an intense red and with a creamy consistency, probably thanks to the creaming of the rice made with parmesan, absolutely al dente, all enriched by the presence of a melting and stringy fiordilatte with a pleasantly sweet aftertaste.
Sip of beer and off we go again. Supplied with lasagna. Now a clarification is needed here. I feel I can say that the supplì in the collective imagination and especially in mine, which since I was a boy I witnessed the preparation of hundreds of supplì by my grandmother and my father, is associated with rice.
Here, however, we take a leap forward in the evolution of the species. Inside this "supplì" there is actually a tile of lasagna. Once opened you can see the various layers of pasta sheets, the delicate bechamel and a very good ragù sauce arrive. The breading that contains everything in this case too is thin and crunchy and when you bite it the sensation is truly a pleasure.
Beer and off we go, provola and pepper substitutes on the coast. Here, in my opinion, we are faced with the pièce de résistance, I will omit the description of the breading because it is perfect, the aromas that arrive when you bite into it are exceptional. As can be understood and as was confirmed to me by one of the guys at the club, behind this preparation there was a study to achieve this result.
The linguine is perfect, the flavors of provola, pepper, Sichuan pepper and then basil and lemon zest arrive in sequence which degrease and cleanse the mouth, a sort of journey between these flavors that is repeated with every bite.
Now let's move on to the strong flavours, supplì tonnarello, cheese and pepper.
In this case, once the breading is broken you get the "hit" of the cheese on the nose which has repercussions on the palate, an important flavor which then leaves room for the pepper. A real creamy cacio e pepe.
It pairs with the spaghetti ajo e ojo supplì. Overpowering aroma and taste as a spaghetti with garlic, oil and chilli pepper should be.
When bitten, the intense aromas become flavors until the palate is enveloped by the pleasant spiciness of the chilli pepper.
In closing I would add that the staff is friendly and kind, the prices are absolutely in line with the quality of the preparations and ingredients.

A lunch in the Trastevere area in this pizzeria that offers traditional Roman pizza. The fried foods were delicious, but we found the mozzarella in the supplì cold and compact, and not stringy as expected. In that case a few more seconds would have been necessary to reach perfection. The pizzas were very good, with a shallow and crunchy base. The price was in line for the area where the restaurant is located.
