As a resident of Ciociaria, I appreciate your research rooted in the region, but I feel a desire for a closer connection to local culinary traditions. I'd be fascinated to see the traditional dishes of Ciociaria revisited with your personal and innovative perspective. It's a complex challenge, requiring historical research and study, but my experiences at this restaurant have convinced me that you have the sensitivity and skill to transform these roots into unique and contemporary creations.

A few steps back
Whenever we pass through Fiuggi, this restaurant is a must-visit for us.
Chef Tassa's touch is clearly evident. The menu is based on seasonal and local products, with a particular focus on vegetables.
We chose the 8-course menu.
It's a shame the welcome menu has changed: there are no longer various finger foods, but rather the course that previously opened the tasting menu.
Unfortunately, the 8 courses also include the chef's welcome, so there are actually 7.
The quality of the dishes is excellent, both in terms of flavor and balance.
The wine tasting wasn't entirely satisfying: no particularly noteworthy labels, nor particularly impressive ones.
Overall, however, it was still a pleasant evening.

A wonderful dinner in a family-friendly, refined atmosphere. We ate very well, and the food was excellent value. A big shout out to Paolo, the restaurant manager. We'll definitely be back to try the autumn menu.

We came to this gourmet restaurant with friends. The service was efficient and harmonious. I was very surprised by the dishes, which seemed so simple but offered a magnificent experience. Even with some ingredients I don't like in everyday life, I was able to discover them from a different perspective, which made me love this seven-course service. Regarding the four wines we were served, they truly complemented the dish, and I think it's essential to order them if you want to fully enjoy the experience.
My least favorite was the first lentil cake; it was too sweet for my taste and a little hard to finish. Secondly, I would have liked water to be available on the table. Although the lady poured it numerous times, I like to drink a lot during my meal. I understand that it's not aesthetic to have bottles on the table, but perhaps some pretty carafes would have done the trick. I really appreciated the waitress' explanations and the kindness of the waitress. They answered all our questions satisfactorily, and the explanations were clear and prompt.
My favorite dishes were definitely the Campari and truffle salad and the stuffed cappelletti. The onion was an interesting discovery, which was unanimously appreciated by all seven guests and aroused a lot of curiosity.
I found the dining room a little sparsely decorated, but this allowed us to focus on the table and the service, and perhaps that was the goal.
Regarding the price, around €150 per person is reasonable and what I expected, as we ordered the seven-course meal and four wines.

We were there for the first time invited to a communion and I must say that the food was very special and good. They are flavors and culinary experiences that you do not taste every day. The chef is very good. Salvatore Tassa. Unique in his way.
