What I'd like to focus on is a wish I expressed to the chef: As a resident of Ciociaria, I appreciate your research rooted in the region, but I feel a desire for a closer connection to local culinary traditions. I'd be fascinated to see the traditional dishes of Ciociaria revisited with your personal and innovative perspective. It's a complex challenge, requiring historical research and study, but my experiences at this restaurant have convinced me that you have the sensitivity and skill to transform these roots into unique and contemporary creations.

A few steps back Whenever we pass through Fiuggi, this restaurant is a must-visit for us. Chef Tassa's touch is clearly evident. The menu is based on seasonal and local products, with a particular focus on vegetables. We chose the 8-course menu. It's a shame the welcome menu has changed: there are no longer various finger foods, but rather the course that previously opened the tasting menu. Unfortunately, the 8 courses also include the chef's welcome, so there are actually 7. The quality of the dishes is excellent, both in terms of flavor and balance. The wine tasting wasn't entirely satisfying: no particularly noteworthy labels, nor particularly impressive ones. Overall, however, it was still a pleasant evening.
