One small point that, in my opinion, is the excessive intensity of the lighting from the interior "light strips."

Perched on a ridge with spectacular views on both sides, it's truly a very comfortable place. The entire structure is meticulously designed, with a touch of modern architecture that blends beautifully with the surrounding area. The various indoor and outdoor rooms are lovely, whether for an intimate dinner, a small reception, or an aperitif in the hermitage. The soundproofing is excellent. The tables are not covered with tablecloths, but with plastic placemats. The napkins are cotton, and the cutlery and glasses are of excellent quality. The chairs are padded, inviting you to gather around after the meal. The cuisine is excellent; a big step forward since opening. The dishes are beautifully presented, both on the plate and in the descriptions of the staff, who are trained and in uniform. The wine list offers an excellent selection from around the world. La Sbornia is a restaurant in a modern, scenic location, with an imposing "tree" structure that, thanks to the internally lit windows, offers a truly evocative spectacle at night. It's a shame that such beauty isn't matched by the rest of the experience. The service was inexplicably slow, despite the quiet dining room; so much so that I forgot about dessert! The Alba white truffle issue deserves even more criticism. Since it's a product paid for by the gram, I expected the standard practice of grating it at the table with a transparent scale. This didn't happen. And I had the feeling that my young age was mistaken for inexperience. I didn't object at the time because I consider it rude to start discussions during dinner, but that doesn't change the substance. In short, an excellent location, but slow service and subpar truffle management. A place with great potential, but one that needs to rethink its seriousness and transparency to truly deserve the reputation the area demands.

Expectations were high, and the result was that they were partly disappointed. The location was beautiful and modern, but then: low and uncomfortable tables, very close together, cafeteria-style, and the worst part were the LED strips that blinded you because they were shining directly into your eyes. Extremely annoying, depending on your seating position. The service was lacking and inattentive, very slow. The food was good but unremarkable. A lot of drama and little substance. €10 for a mediocre Alta Langa by the glass was outrageous. €3 for a coffee was equally outrageous. Not even a chocolate to sweeten the deal. In short, I won't remember the dinner for anything in particular. I'd recommend working on the details.
